How to make moi-moi
Ingredients:
Bean flour
cayenne pepper
scotch bonnet pepper
onion
crayfish
vegetable oil
seasoning cube
salt
eggs (any protein of choice)
fresh tomato (optional)
How to prepare
In your blender, add your peppers, onion and crayfish and blend till it's smooth. In a bowl, add the quantity of bean flour you want to use, add little warm water and mix till the batter is smooth like paste. Pour in your blended pepper mix and combine gently. Add your vegetable oil, seasoning cubes and salt and mix.Boil your eggs , remove the shell and set aside. slice your tomato and set aside. Get your moi-moi plate, pour in your batter, leaving space at the top to help it rise, add your egg and tomato and cover it. Put into a pot with medium water size and set on fire. Allow to boil for 20 minutes. When it has formed and not paste-like, remove from fire and allow it to cool off.
Your moi-moi is ready to be served. Enjoyπ
