HOW TO MAKE FONDANT ICING

*Ingredients*
1. Gelatin 2tsp
2. Room temperature water 1/4 Cup
3. Glucose 4tsp
4. Icing sugar 1kg
5. CMC or tylos powder 1tsp
6. Crisco 1/2tsp

*Preparation*

*Step 1.*
Sprinkle the gelatin over the Room temperature water in a small bowl and place on hot water to dissolve.

*Step 2*

Add Glucose to gelatin mixture and mix very well .

*Step 3*
Put the icing sugar into a bowl, add CMC and sieve three times.

*Step 4*
Make a hole in the middle of the icing sugar and CMC then stire the gelatin, glucose and water mixture into it with your hand, mix until it becomes smooth.

*Step 5*
Prepare your work table and apply some crisco or flour on the table for smooth job.

*Step 6*
Knot the fondant very well untill stretchy.

*Step 7*
Wrap the fondant in a plastic wrap and place in a tight sealed container to avoid it from drying out.

NOTE:
During dry season reduce your CMC, During raining season reduce your glucose.

Are you having any difficulty with your fondant this season that the humidity is just too much?
This is a tested and trusted recipe
I don’t have air conditioner but my fondant doesn’t sweat

1.5kg icing sugar
1tablespoon CMC
1/2 cup water
1/4cup Glucose
1&1/2 tablespoons of galatine

Desolve your in the 1/2 cup of water over a double boiler method
Add your glucose and allow to dissolve
Add your CMC to you icing sugar and add in the liquid
Then mix until well incorporated

Try this and thank me later

Please knead with cornstarch/cornflour

HOW TO MAKE SHAWARMA BREAD

THIS IS HOW I MADE MY SHAWARMA BREAD.

RECIPE:-
All purpose flour- 3 cups
Yeast- 1 tbsp
Sugar- 1 tsp
Salt- 1/2 tsp
Veg. Oil- 2-3 tbsp OR Melted butter- 1 tbsp
Warm water- as required

PROCEDURE:-
1. Seive flour and add to a dry bowl, add, sugar, salt, yeast and give it a good mix.

2. Add warm water little by little and knead, add oil and continue kneading for about 3min or until a dough is formed and no longer sticking to the bowl and your palm ( dough should feel and look like your normal bread dough)

3. Put your dough in a dry bowl, cover tightly and keep in a warm place to rest and double in size for about 1 to 1 1/2 hrs

4. Bring dough to a flat surface, punch down and knead properly. (You can sprinkle a little dry flour to your flat surface b4 dropping the dough for kneading so it doesn't stick to the counter or rolling pin), knead dough to smooth and form it into a big round ball

5. Divide dough into 6 parts, roll them to form small balls, flatten each with your rolling pin to form big round shape. ( if sticky, sprinkle a little flour to aid free rolling). Cover and allow to rest for 5min.

6. Heat a non stick pan on heat, (Normal flat pan can also do well). Put your round dough in it, heat each side of dough on a MEDIUM FLAME/HEAT until it's ready 2 -3 min maximum. Brush the surface of the dough with a little oil and heat for about 1min and bring down. Cover the ready product with towel so it stays soft and warm.

7. Continue the process in num 6 above until your round doughs are exhausted.

IF HEAT IS TOO LOW, YOUR SHAWARMA BREAD OR FLAT BREAD BECOMES TOO DRY. IF HEAT IS TOO MUCH, YOUR SHAWARMA BREAD BECOMES TOO HARD, CRISPY AND WON'T BEND EASILY WITHOUT BREAKING.
PLEASE, USE MEDIUM HEAT.

You can also use your oven in place of the non stick pan on heat.

TIP:- Shawarma bread is best when served the day it’s made. You can store it in a freezer about one month and reheat gently when needed.

Responsibilities: Assist the Executive Chef in daily supervision, coordinate the work of the kitchen team, ensure the quality and consistency of dishes, cover the Executive Chef in his absence.

3. Head of the Party (Head of Partida)
Responsibilities: Direct a specific section of the kitchen (e.g., pastry, meats, fish), prepare and cook dishes of your section, supervise lower-rank cooks

4. Line Cook (Line Cook)
Responsibilities: Prepare and cook ingredients according to Chef de Partie's instructions, ensure dishes are prepared on time and with expected quality, maintain cleanliness and organization of your workstation.

5. Cook ( Cook )
Responsibilities: Assist in the preparation of ingredients, follow recipes and procedures, assist in kitchen cleaning, assist in various tasks as per the needs of the team.

6. Kitchen Assistant Responsibilities: Perform basic tasks such as peeling, cutting, and washing ingredients, maintain cleanliness of work surfaces and utensils, assist in simple kitchen tasks as directed.

7. Pastry Chef (Pastry Chef)
Responsibilities: Create and prepare desserts, cakes and bakery goods, develop new pastry recipes, supervise pastry helpers.

8. Baker ( Baker )
Responsibilities: Bake bread, pastries and other bakery products, ensure freshness and quality of products, manage baking times and production.

9. Dishwasher ( Dishwasher )
Responsibilities: Wash and sanitize dishes, utensils and kitchen equipment, maintain cleanliness of kitchen and storage areas, assist with general cleaning tasks.

10. Chef Clerk (Assistant to Chef)
Responsibilities: Attend various kitchen tasks as instructed by Chef de Partie or Sous Chef, learn and improve culinary skills, maintain cleanliness of your work

HOW TO MAKE BREADCRUMBS AT HOME

Homemade breadcrumbs are easy to make and very useful as well.

Ingredients
A few slices bread of choice a few slices to a whole loaf

Instructions
- Toast slices of bread in a pan until crisp (not brown) on both sides.
- Trim off the brown edges off the slices (if you want strictly white crumbs).
- Cut bread into cubes or little squares.
- Grind the cubes in the dry mill of a blender/food processor.
VOILA! Your breadcrumbs are ready.

What to do with breadcrumbs? Just a couple of ideas:
- Breadcrumbs can be used for coating food before frying to give it a crunchy, crispy finish.
- It can also be used for binding foods like meatballs, scotch eggs
- Breadcrumbs can also serve as a thickener for soups
