Papardelle Lamb Ragù Bianco
Lamb ragù has always been a favourite of ours, but it’s still not on our permanent menu.
Not because we don’t love it, but because of how much care it demands. From the slow sofrito prep, to hours of gentle cooking, to carefully deboning each piece; every step is a little more delicate, a little more time-consuming. And we prefer to keep it in small batches, so nothing goes to waste and every plate stays intentional.
That’s why when it appears on the menu, it’s always for a limited time, so don’t miss it.
This week, Lamb Ragù Bianco with papardelle. A white ragù base (no tomato, for those who prefer it cleaner), finished with a subtle twist of sweet pepper for a light citrus note, paired with our in-house hand-cut papardelle.
Simple. Slow. Limited.
