HOMEMADE PUFF PASTRY DOUGH

Ingredients

For the Dough
- 500 g all-purpose flour
- 10 g salt
- 250 ml very cold water
- 50 g unsalted butter, melted and cooled
- 1 tsp lemon juice or white vinegar

For Laminating
- 350 g cold but flexible unsalted butter

Instructions

1. Make the base dough: Mix the flour and salt. Add the cold water, lemon juice, and melted butter. Mix just until a smooth dough forms. Do not over-knead.

2. Shape the dough into a rectangle, wrap, and refrigerate for 30 minutes.

3. Prepare the butter: Place the 350 g butter between two sheets of parchment paper. Gently pound and roll it into a rectangular sheet about 1 cm thick. Refrigerate for 10–15 minutes. The butter should be cold but flexible.

4. Enclose the butter: Roll the dough into a rectangle large enough to completely enclose the butter. Place the butter in the center and fold the dough over it, sealing the edges well.

5. First fold: Lightly flour the work surface and gently roll the dough into a long rectangle about 6–8 mm thick.

6. Fold the dough into thirds like a letter. Bring one end toward the center, then fold the other end over it. Turn the dough 90°.

7. Refrigerate the dough for 30 minutes to keep the butter cold and prevent it from melting into the dough.

8. Repeat the lamination: Roll the dough into a rectangle and fold it into thirds again. Complete 6 single folds in total, refrigerating for about 30 minutes after every 2 folds, or sooner if the butter becomes too soft.

9. Final rest: Wrap the dough and refrigerate for at least 1 hour. For the best results, rest it overnight.

10. To use: Roll the pastry to about 3–4 mm thickness, depending on the recipe. Cut with a sharp knife without pressing down on the edges.

11. Bake puff pastry in a preheated oven at 200–220°C (400–425°F). The high heat creates steam between the layers, helping the pastry rise and become beautifully flaky.

12. For even layers, roll gently from the center toward the edges and avoid pressing too aggressively.

DEMI-GLACE — Professional Recipe

What is Demi-Glace?

Demi-glace is a classic French brown sauce made by reducing brown stock and espagnole sauce until it becomes rich, glossy, concentrated and deeply flavorful. It is commonly used as a base for refined meat sauces.

Ingredients

* 1 L brown veal or beef stock
* 1 L Espagnole sauce
* 50 g mirepoix — onion, carrot & celery
* 1–2 tbsp tomato paste
* 1 bay leaf
* 2–3 sprigs fresh thyme
* 2–3 sprigs fresh parsley
* 5–6 black peppercorns
* Salt — as required
* 20–30 g butter — optional, for finishing

Method

1. Prepare a well-flavored brown stock and strain it properly.
2. Prepare the Espagnole sauce separately.
3. Combine equal parts brown stock and Espagnole sauce in a heavy saucepan.
4. Bring the mixture to a gentle simmer.
5. Add mirepoix, tomato paste, herbs and peppercorns if desired.
6. Skim off impurities and excess fat regularly.
7. Reduce slowly over low to medium heat. Avoid vigorous boiling.
8. Continue reducing until the sauce becomes thick, glossy and concentrated.
9. Strain through a fine chinois or sieve.
10. Reduce further if necessary until it reaches a nappe consistency—it should lightly coat the back of a spoon.
11. Adjust seasoning carefully.
12. For a luxurious finish, whisk in a small amount of cold butter just before service.

The BEST Chocolate Wafer Rolls (Pan Version)

Ingredients

Dry
• 100 g (1⅛ cup) Maida
• 90 g (¾ cup) icing sugar
• 14 g (2¼ tbsp) cocoa powder
• 8 g (1 tbsp) milk powder
• 3 g (¾ tsp) baking powder
• A pinch of salt

Wet
• 67 g (4½ tbsp) oil
• 180–190 ml milk
• ½ tsp vanilla

Instructions

1. Make the batter: Whisk together the maida, icing sugar, cocoa powder, milk powder, baking powder, and salt. Add the milk, oil, and vanilla. Whisk until smooth and lump-free.

2. Cook the wafer: Heat a non-stick pan over low-medium heat. Pour a small amount of batter and spread it very thinly into a circle. Cook until the surface looks dry and the edges begin lifting slightly. Flip briefly if needed.

3. Roll immediately: While the wafer is still hot, quickly roll it tightly around a chopstick or skewer. Hold for a few seconds until it sets. Remove and let it cool completely to become crisp.

4. Fill, if desired: Once completely cool, fill with chocolate ganache, whipped cream, Nutella, Biscoff spread, or pastry cream.

5. Store: Store completely cooled wafer rolls in an airtight container to keep them crisp.
