Breakfast for dinner! From scratch biscuits and gravy, "greasy taters" like my grandma would make with onions, sausage, and scrambled eggs! Cooked with my hubby helping me while listening to country music. 😍

Edit- Thanks everybody for the comments, love, and appreciation for my post. I'm a home dialysis patient who runs treatment 4-5 times a week so cooking is rare nowadays, but I still like to cook large batches occasionally for my husband who doesn't get the same meals he used to. I read every comment when I'm resting after treatments and enjoy them so much. I just don't have the energy to reply to everyone. My husband and I live in Cleveland, Ohio, but my beautiful mom and grandma who taught me to cook are from Beckley, West Virginia. 💛💙

By no means am I financially wealthy, but I am wealthy in spirit, able to share the little I have with others in need."
A long time ago l, started a Sunday Supper initiative.
Throughout the week I would come in contact with people that were facing the storms of life such as losing a loved one, sickness, losing a job, birth of a child, surgery, divorce, depression,birthday ,etc
As I said , I'm not feeling the best but sweet and kind people still need a decent meal. I budget carefully and look for sales because I am a school teacher
So I got up around 4 am this morning and started cooking early. I did it early because I was not feeling as bad at the moment and now I can rest all day finally. Cooking does relax me though
This is the food I made
Smoked Meatloaf
Turkey Necks
Fried Chicken
Pasta Bake
Stuffed Bell Peppers
Butter Beans
Sweet Potatoes
Cabbage Greens & Mixed Greens
Homemade Mac and Cheese Stuffed Bell Peppers
Honey Butter Cornbread Muffin
Cash Iron Skillet Cornbread
My mom assisted me in making the plates and dropping them off.
Today l fed:
2 senior citizens
1 family (4 people)that mom had a major surgery last week and she is in bed for 14 days.
1 friend of family who is still recovering from double knee replacement and her elderly mother
1 cousin that just left an abusive situation. She has 3 children and her mom with her
So in total we made
12 plates today to give
7 plates I made for my own household

💜Purple Velvet Cake with Cream Cheese Frosting💜
Ingredients
2 C AP flour
1½ C sugar
¼ unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1 C vegetable oil
2 large eggs
1 TBSP white vinegar
1 tablespoon vanilla extract
1 C buttermilk
- Purple food coloring (gel or liquid)
For the Cream Cheese Frosting:
8 ounces cream cheese, softened
½ C unsalted butter, softened
4 C powdered sugar
1 tsp vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
3. In a separate bowl, whisk together the vegetable oil, eggs, vinegar, and vanilla extract.
4. Gradually add the wet ingredients to the dry ingredients, alternating with the buttermilk, and mixing until smooth.
5. Add purple food coloring until the desired shade is reached, mixing until evenly incorporated.
6. Divide the batter evenly between the prepared cake pans.
7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the Cream Cheese Frosting:
1. In a large mixing bowl, beat together the cream cheese and butter until smooth and creamy.
2. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
3. Stir in the vanilla extract until well combined.
4. Once the cakes are completely cooled, frost the top of one cake layer with a generous amount of cream cheese frosting.
5. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
6. Slice, serve, and enjoy!

Homemade Pineapple Spread
**This is so additive,it's hard to stop eating!**

1 (8 oz) Cream Cheese,softened
1 small can (8 oz) Dole crushed pineapple
1 Tablespoon confectioners sugar (or to taste)
1 (2 oz)small bag chopped pecans (I use a little over half a bag)

*Beat together cream cheese and confectioners sugar;drain pineapple and reserve some of the juice,add pineapple into the cream cheese and beat until well combined.I add in a little of the pineapple juice to thin it out to a spreading consistency Mix in by hand the pecans.Pour into a bowl and Cover and refrigerate for a couple of hours.
Serve with Ritz crackers,toast,buttered croissant or anything you desire. ❤️ NOTE: Diced green bell peppers and finely chopped sweet onion may also be added to give it more of a savory flavor.

Reuben sandwiches, tater tots, broccoli, and strawberries. Coming up, Baskin Robbins chocolate-fudge-Oreo-Reese’s peanut butter ice cream cake.
I needed more bread than just one loaf of the marble rye, but I didn’t want a whole second loaf. DO YOU SEE WHAT I FOUND?!?!! Cheesecake Factory sandwich bread!!!!! Four of the Reuben’s got made with this.
Also, I usually make homemade Russian dressing, but I’ve been under the weather so I bought Ken’s Russian dressing. It was absolutely delicious ❤️.

Cottage Cheese
Jello (flavor is your choice)
Whip cream
Crushed drained pineapple
Mix all together serve or chille more and serve.

A long day hunting these poke salad, I cut them off stock, gave them a 2 hour salt bath. And I washed them 2 more times. Boiled them 30 minutes, rinsed them in cool water squeeze the water out of them, boiled them again repeat the same process and then refrigerated them. I cooked them today with bacon grease, onions and 2 scrambled eggs, salt and pepper to taste and made a pan of cornbread. Y’all when I tell you they was good, that’s an understatement! 😋 they turned out so good, just like my Mama made them. I was so proud of myself.

Melt a stick of butter in a pan (I use a 10
cast iron skillet) mix 1 cup self rising flour, 1 cup sugar and 3/4 cup milk pour in the skillet on top of butter do not stir, add fruit, I used 1 large can of peaches drained for this one, bake at 375° for 45 minutes my mom called it "Lazy day Cobbler" you can use 2 regular cans of any kinda pie filling for this 🙂

This doesn’t look very good, but lemme tell ya it’s delicious! & so so simple.. My mom taught me to remember A cup, A cup, A cup… which means 1 cup Sugar, 1 cup Flour, & 1 cup Milk. Mix together & add your favorite fruit (I added a can of peaches) for the best cobbler you’ll ever eat in your life!! Top with cinnamon & sugar half way through baking. Bake on 300 degrees for 35 min. Yummy! 😋❤️🥧 Southwest Arkansas

Edited: use self rising flour & drain juice from canned peaches.

My grandmother (Mom's mom) was from Hazard, Kentucky and my Mom remembers her fixing some Appalachian recipes when they were growing up in Norfolk, Virginia. I'm trying to keep our Appalachian heritage alive by fixing some of her recipes and other Appalachian recipes. I live in Israel now, which has its own traditional foods and culinary wonders, but I'm doing a lot of mountain cooking. Here is some cornbread I baked a few days ago in the cast iron skillet I bought in Asheville, North Carolina before I moved. I can't find white cornmeal here, so I used masa that I bought from a Mexican restaurant in Jerusalem. Turned out just fine!
