βSnow Day Mushroom & Herb Comfort Soupβ

π It tastes like warmth in a bowl, with earthy mushrooms and cozy spice wrapped in creamy richness.
π§Ύ INGREDIENTS
π« Soup Base:
2 tbsp butter
1 tbsp olive oil
1 small onion, finely diced
4 garlic cloves, minced
450g (1 lb) mushrooms, sliced (mix of cremini, shiitake, or white)
1/2 tsp smoked paprika
1/2 tsp chili flakes (optional)
1 tsp dried thyme
Salt + pepper to taste
π₯£ Creamy Finish:
4 cups vegetable broth
1 cup heavy cream or full-fat coconut milk
1/3 cup grated Parmesan or crumbled feta
πΏ Garnish:
Fresh dill
Chopped parsley
Extra sautΓ©ed mushrooms
β¨ The kitchen fills with garlic, butter, and earthy mushroom aromas that make winter feel welcome.
π’ INSTRUCTIONS
In a large pot, heat butter and oil over medium heat.
SautΓ© onions until translucent, about 5 mins.
Add garlic, thyme, paprika, and mushrooms. Cook until mushrooms release liquid and brown.
Stir in chili flakes, salt, and pepper. Let flavors build for 2 minutes.
Pour in broth, scraping up all browned bits. Simmer 10β15 minutes.
Reduce heat and stir in cream and cheese. Let it gently bubble.
Taste and adjust seasoning if needed.
For more texture, blend half the soup, then mix back in (optional).
Ladle into bowls and top with herbs and extra mushrooms. π
