Best Glossy Chicken & Crunchy Vegetable Stir-Fry with Wild Rice
This vibrant meal-prep favorite combines juicy chicken bites with broccoli, crisp sugar snap peas, colorful peppers, spring onions, and a shiny savory-sweet glaze, all served over a hearty wild rice blend.

Ingredients
🍚 250 g (1¼ cups) wild rice blend or brown-and-wild rice blend, rinsed
💧 Water, as directed on the rice package
🍗 500 g (1.1 lb) boneless, skinless chicken breast, cut into bite-size pieces
🥄 1 tbsp light soy sauce
🌽 1 tbsp cornstarch
🫒 2 tbsp neutral cooking oil, divided
🥦 300 g (about 4 cups) broccoli florets
🫛 180 g (about 2 cups) sugar snap peas
🫑 ½ large red bell pepper, thinly sliced
🫑 ½ large yellow bell pepper, thinly sliced
🧅 4 spring onions, sliced, pale and green sections separated
🧄 2 garlic cloves, finely chopped
🫚 2 tsp freshly grated ginger
For the shiny stir-fry sauce:
🥢 3 tbsp light soy sauce
🦪 2 tbsp oyster sauce
🍯 1½ tbsp honey
🍚 1 tbsp rice vinegar
💧 80 ml (⅓ cup) water
🌽 2 tsp cornstarch
🌰 1 tsp toasted sesame oil
Instructions
Prepare the rice: Cook the wild rice blend following the package instructions, generally 25–40 minutes, until tender with a slight chew. Keep it warm for serving.
Season the chicken: Mix the chicken pieces with 1 tbsp soy sauce and 1 tbsp cornstarch. Let them rest for 10 minutes.
Whisk the glaze: Combine all sauce ingredients in a bowl and whisk until no cornstarch lumps remain.
Brown the chicken: Heat 1 tbsp oil in a hot wok or wide skillet. Stir-fry the chicken for 5–7 minutes until golden in places and fully cooked to 74°C/165°F, then remove temporarily.
Stir-fry the vegetables: Pour in the remaining oil and cook the broccoli for 2 minutes. Add snap peas and both peppers, then toss for 3–4 minutes until colorful and crisp-tender.
Build the aroma: Add the pale spring onion pieces, garlic, and ginger. Stir continuously for 30–45 seconds.
Finish with sauce: Put the chicken back into the pan. Re-whisk and add the sauce, then cook for 1–2 minutes until it forms a glossy coating around the chicken and vegetables.
Assemble: Spoon the rice into four bowls or meal-prep boxes, top with the stir-fry, and scatter over the spring onion greens.
Helpful Notes, Substitutions & Variations
To recreate the photographed appearance, use large broccoli pieces, whole snap peas, and long pepper strips. Boneless chicken thighs work well instead of breast. Add chili for spice, use tamari as a soy sauce alternative, or reduce the honey for a less sweet finish. For meal prep, chill promptly and refrigerate for up to 3 days.
