This spread was laid out by our faves Chandima Akka and Pushpa Akka, the leading ladies behind Veda’s kitchen, and the hands that dish up the curries we all know and love. Market run! We went to the market at dawn with Head Chef and cool cat scanning crates for seasonal specials and rare greens. This run yielded a beautiful giant “mas kos” a rare cultivar of Jackfruit which was all pulp: thick and steak-like. Dished up with plenty spice and coconut, and come dinner service it was all gone.

Traditionally, the Sri Lankan tool / utensil to make pittu with was fashioned out of bamboo, string, and cloth. This utensil was effectively used to steam, rendering fluffy cylindrical bases to be paired with curries of choice.

Our Pittu menu is a folk favourite. Lots of protein and fiber infused red rice flour made in the typical Sri Lankan way. Served alongside of plenty of coconut milk infused greens and thick curries, along with a fritter or two.

The vegetation here, foliage, flora, all of its variations formulate with purpose. Ornamental yet dense. The banana blossom is a great example of flower power: architectural minerally, and rich in fiber. You might have tasted this natural wonder in our banana-blossom cutlets or sambols: both making appearances for lunch and dinner.

Our drinks appeal to the instincts. All are made with devotion, innate knowledge of plant profiles, and sometimes isolated / combined natural-chemical components. Regional wildflowers and herbs are layered to extract flavour profiles that are near impossible! For example: our green juice is made with Sri Lankan herbs, but tastes like green apple.

We love flair but most of our greens at Veda stay raw and minimal. In ancient Ayurvedic practise, peels and rinds play an important role in muscular rejuvenation. Pulps and seeds were crushed to make powders for aches and pains. All things return to plants.

Here is a fresh bushel of Narang: a Sri Lankan citrus, like a tiny mandarin. The fruit is tart and is best served slightly sweetened. Try a glass of our Narang Laurel, signature Veda iced tea.

Each leaf, root, and seed, carries the imprint of climate, soil, farmers, natural history, and the constant growth of the island spirit through the ages.

Here are some of our favourite fruits and flowers. Veda recipes are all made with intention, focusing on healing, balance, and drawing from Hela practise.

Our Veda Lemonade is a hot request. The standout flavour is from Iramusu: an island root-herb, the best antidote to help soothe and cool the body. Additional notes of vanilla, and fermented citrus elements. Tastes mildly of elderflower. Comes with a helping of basil seeds to aid with digestion.
