Tamarind: a taste of Laos Tamarind: a taste of Laos is a specialist restaurant and cooking school in Laos’ mountainous and temple-studded ancient capital, Luang Prabang.

Our restaurant offers many different ways to enjoy Lao foods and culinary customs: delicious meals designed to introduce you to the delicate balance of flavours in this cuisine, convivial feasts, adventurous dining experiences, intriguing sample platters of Lao specialities and a range of gourmet food gifts and products. Our cooking school provides a unique day of cooking in open air pavilions amidst picturesque gardens and lotus ponds. Students explore the intriguing cuisine of Laos: investigating the variety of foods in the market, learning tips and customs associated with the cuisine, using traditional Lao techniques to prepare delicious dishes and sitting down to a wonderful Lao feast.

These are dok daang, or ‘earring flower’ which are in season right now. They’re delicious as mok - steamed with herbs, rice powder, and perhaps chicken, wrapped in banana leaves and steamed.

We’ve had a loss in the family, and after today’s funeral proceedings, we’re making mok moo sai youk. Minced pork belly, steamed in banana leaf with herbs, spices and the interior of the banana tree. This latter is called youk, and that’s what you can see in this video, as they twirl bamboo skewers through it in order to remove the sap. This dish is particularly served at funerals, and is a local specialty in Joy’s village.
