Suffering from a concussion and bruised ribs due to a nasty falling, the doctor ordered me to take it easy for the next few weeks.
No driving, no biking, no climbing ladders, no reading and limit my tv/screen time.
She didn’t tell me not to cook though, so today (with lots of pauses in between)I made jjajangmyeon, with pork loin, onions, garlic, zucchini, white cabbage and of course black bean paste.
Marinated the pork loin with some sesame oil, mirin, spicy bulgogi marinade, garlic and soy sauce and set it aside. Then I chopped up the onion and the cabbage, diced the zucchini and minced the garlic.
Then I started with frying the pork loin in some oil, scooped it out of the pan and put my veggies in. After a couple of minutes I added the black bean paste, put the fried pork loin back in, added some water and let it simmer for a bit.
Next I thickened the jjajangmyeon sauce with some cornstarch, cooked my noodles and plated it altogether with green onion, red chili, sesame seeds and finely sliced cucumber on top and ate it with some pickled radish.
After dinner I went back to bed, exhausted but with a very full and happy tummy.
