So, let me give you a story. About two weeks ago I was somewhere upcountry.

When time for lunch came, I offered to cook chapos.

Let me tell you, I forgot to prepare my mind that I wasn't going to have the luxuries am used to cooking with.😆 That things were going to be different.

The rolling pin wasn't my one and only (I don't know if it's just me but I have a rolling pin I can't do without 🤭)

Then, the fuel. I was switching between firewood and charcoal because none was serving me 🤦. The charcoal was too light (so it would burn and end within no time) while firewood I couldn't regulate the fire easily so chapos would easily burn.

Yes yes, I know mchagua njembe si mkulima (if you choose your tools of work you aren't a farmer) but still 🤦🤭

Anyway today I did it at the comfort of my kitchen so karibu chapos 😋

It has been loong, really long 😅

Life happened and I had to take a long break. Even Heal and Thrive with Jeniffer Kiarie felt the pinch. But life happens to everyone, right?

Anyway during the break, I prepared the below for a client. Happy to report that she loved them. 🥰

I know this post is long overdue 🙆‍♀️, but at least am doing it, right?😅

Now, some of you asked for the recipe for this yummy mandazis 😋

Here we go. Next time I will do the photos showing the process.

Ingredients:
4 cups All purpose AJAB FLOUR. My favourite 😍
2 tablespoon Baking powder
500 ml Milk
1 tablespoon sugar
1/4 tablespoon Salt
2 tablespoon Blueband margarine
Cooking oil

Mix the dry ingredients first. Then add the melted margarine and rub it in. You can also add in some cooking oil at this point. Emphasis on 'rub it in'. This contributes to softness.

Add the warm milk. Knead but don't over knead. Maximum of 2-3 minutes. Overkneading leads to hard mandazis.

Deep fry in medium heat oil till golden brown. Enjoy 😉 😋

So, some time back I told you how I was brought these two pumpkins.

I cooked some chapos with them but they were big so some remained.

I decided to cook and blend them and add them to uji power (uji that I prepared using a combination of different flours sold as "uji power" at Iruga Food Mart in Ruiru town).

Let me just say it was super tasty 😋 (I forgot to take a photo)

And that's how I have found another use for pumpkins.

Last week, my other business under Heal and Thrive with Jeniffer Kiarie occupied me so much that I could not process a single beef samosas order even if I got it.

Do you love beef samosas like me? What keeps you from buying them as often?

For me, it's the quality of the attached: the filling. One, the filling being spoilt 🤮 and two, having too much vegetables compared to the beef.

Spoilt meat especially, it made me to only have one or two restaurants that I trust enough to buy their samosas.

Truth is though, in business, there are all manner of excuses for compromising. Key among them being to cut costs and, to buy more convenience.

But personally, due to the above experience, I can't compromise.

In fact, when recently a client ordered samosas from UAE, my biggest worry was if they would arrive flesh. And yes, I had used fresh beef and refrigeration was used along the way, but the one thing I desired to hear was that the filling remained as it left here.

2 days later, I got the attached feedback 🤗

All this to share a business lesson I am learning: you have to make a choice from early enough on what your brand will stand for.

For me, it's quality, taste, and consistency. I am not yet there, but that's my goal, whatever it will take me.

My most recent lesson: the temperature of the water is a non issue.

I started using cold water by chance, and nothing changed.

What affects softness then? In my view, the dough. If your dough is hard, your chapos will be hard.

Second, the pan. Pans that are too thin especially at the center will give you biscuits chapatis 😅

Anyway you people said you want beef samosas not chapos right? 😅
