Black truffle feuillatine soup was the headline recipe, but for the multiple generations of chefs through which his influence filtered, it was the application of tradition to new approaches that we carry with us. The Paul Bocuse cookbook written in the 1970's which I bought in the early 1990's taught me the detailed approach to cooking that no other book previously had. The first recipe I made from the book took 3 days to complete - braised venison leg. Oh what a glorious meal that was. Marinated 48 hours then slow roasted and served with a natural jus infused with juniper berry alongside root vegetables like celeriac & carrot. When I finally landed in a kitchen of a chef trained at the highest level of cooking in Europe, to no surprise the DNA of the cooking style could be traced back to Bocuse - which in turn could be traced back to Ferdinand Point Without ever having met the man, his influence on my cooking was positively magnificent. Merci chef!

Entering the interior of Jin Boulangerie it becomes immediately apparent its roots in the classic French boulangerie. The smell of toasted amber crusts and richly fragrant fermented butter fills the air. The reason Japanese gourmands are willing to travel such a long distance quickly becomes apparent. In a country as food-obsessed as Japan is, this remotely located bakery does ask a lot from their customer – but somehow delivers it in spades.

Our target is one of the world's most remote artisan bakeries and its handcrafted breads and croissants are some of the greatest you will ever taste.
