Nothing at RED gets used once.

These apricots have sat in brine for weeks, doing quiet work. Every batch tasted and re-tasted until the flavour earns its place on the menu.

That brine now lives in TOMATO: Bombay Sapphire gin, tomato water, apricot brine, J.C. Unvined, bubbles.

Same philosophy, different fruit: our lacto fermented plum puree goes into YUZU BLISS SMOKETAIL: Smoke Lab Classic vodka, super lime, yuzu puree, coconut milk.
