Thought of two unlikely lovers at the market: a sun-warmed Alphonso and a bold raspberry, tart and mischievous. I paired them anyway — mango’s silk and raspberry’s snap — and the kitchen turned into a tiny, fragrant festival.
I’ll admit I’m a little late to the mango train; the trees are already tucking their fruit away. But that made this slice more precious: a farewell toast to summer wrapped in vanilla sponge, mango curd, and raspberry component. Each bite is sunny nostalgia with a bright, unexpected zing.
