My All Time Favorite PANI PURI RECIPE

Ingredients:

To make puri:

1 cup Semolina (Rava / Suji)
1/4 cup Fine plain Flour (Maida)
1/4 tsp Baking Soda
1/2 tsp Salt
1/2 tsp oil
Oil to deep fry

To make pani:
1/4 cup Tamarind (Imli) Pulp
2 cups Water
2 tblsp roasted Cumin Seed (Jeera) Powder
2 tblsp Pani puri masala
1/4 Ginger
1/2 cup Coriander Leaves
3 Green Chilly (Hari Mirch)
1 cup Mint Leaves (Pudina Leaves)
1 tblsp Black Salt (kala namak )
1 tblsp Boondi
1/4 tsp hind
1/2 Lemon

To make stuffing:
2 medium boiled potatoes
1/2 cup boiled dried yellow peas/ small chickpeas
salt to taste
Green chutney
Red Tamarind Chutney

How to make pani puri:
To Make Puri:
Mix sooji, maida, baking soda and salt and 1/2 tsp oil in a wide mouth vessel. Now add warm water little by little to knead a stiff dough. The stiffness should be same as for the puris. Cover it with a damp muslin cloth and keep it aside for 30 mins.
Now make small equal lemon sized balls of the dough. Do remember to keep them covered with damp muslin cloth while making more balls.
Now with the help of some dry maida, roll out thin rotis. Make them round with the help of a round cookie cutter or lid of any container.
Points to remember before frying :
1. Always ensure that the oil is hot before frying otherwise the puris will soak in excess oil and will not puff. Put a small testing puri. If it comes up fast then the oil is rightly hot.
2. Also the oil should not be smoking hot or the puris will get burnt and dark.
Heat oil in a deep bottom pan or kadai and put 3 - 4 puris in the kadai and fry them with the help of a slotted spoon.
While frying, press them in the center allow them to puff up. We want a pocket in each and every puri.
Now flip them over and let them cook. Take them out on a kitchen towel when they are light brown and crisp. Don't let them get dark in color.
Let them cool. Later store in an airtight container.
To Make Pani:
Grind in a hand blender coriander, mint leaves and green chillies ginger to make a fine paste.
Mix all the ingredients of the pani along with the green paste. Dissolve the gur properly. Adjust the spices and tanginess according to taste.
Strain through a wire strainer to remove any rough bits. Keep in the refrigerator for 2 -3 hrs before serving.

To Make The Stuffing : In a bowl mix yellow peas, roughly mashed potatoes and salt. Keep aside.
To Serve: Make a small hole on a puri by tapping slowly on the crisp side. Fill some stuffing in the centre along with some green chutney, tamarind chutney and some chilled pani prepared earlier. Stir the pani before using to mix all the masalas.

SAMOSA Recipe

500 gm potatoes - boiled, peeled and chopped
For the dough:
500 gm maida (refined flour)
1/2 cup ghee or oil
10 gm ajwain
Salt
Water
Oil for deep frying the samosas

For tempering:

1/2 cup ghee
1 tsp cumin seeds
1 tsp coriander seed crush
1/2 tsp turmeric powder
1/4 tsp red chilli powder
1/2 coriander powder
1/2 mango dry powder (Aamchur)
2-3 green chillies
2 tsp ginger
1 lime
1 Tbsp coriander leaves
Salt to taste
1/3 cup green peas
2 tsp chaat masala powder
1 tsp fennel seeds
1/2 tsp garam masala
2 Tbsp chopped cashew nuts

Method
Chop the green chillies, ginger and the coriander leaves.

Mix all the ingredients for the dough except water and rub thoroughly.

Sprinkle water and make a hard dough. Set aside for about 10 minutes.

Divide the dough into round portions as per the size of the samosas required.

Heat the ghee and add cumin, when crackling add ginger and saute.

Add the rest of the ingredients excluding the final four and sauté for five minutes.

Mix in the rest of the ingredients, including the potatoes and mix well.
Roll each portion of dough into a thin oval shape cut into 2 semi-circles.
Take a semi-circle. Apply water on the straight edge of the semi-circle. Hold the semi-circle in your hand, fold the straight edge, bringing together the watered edges, seal the watered edges into a triangular pocket.
Stuff the potato mixture and then seal the upper edges.
Repeat with the rest.
Deep fry in oil till golden brown and serve.

How To Make Pizza at Home

What You Need
Ingredients
1 pound pizza dough, store-bought or homemade
1/2 to 1 cup sauce: tomato sauce and Periperi source
2 to 3 cups other toppings: sauteed onions, feta cheese,olives, capsicum , tomatoes,paneer or fried chicken or any other favorite toppings
1 to 2 cups sliced: mozzarella,
Some herbs and garlic flakes , salt ,pepper and chili flakes

Equipment
Pizza stone or baking sheet

Instructions
1. Heat the oven to 550°F or higher: Don't be afraid to really crank the heat up to its highest setting. The high heat will help make a crunchier and more flavorful crust. Let the oven heat for at least half an hour before baking your pizzas. If you have a baking stone, place it in the lower-middle of your oven.

2. Divide the dough in half: One pound of dough makes two 10-inch pizzas. Slice the dough in half and cover one half with an upside-down bowl or a clean kitchen towel while you prepare the first pizza.

3. Roll out the dough:
Method : Pizza Baked on a Baking Sheet: Brush a thin film of olive oil on a baking sheet. Working with one piece of the dough at a time, form it into a large disk with your hands and lay it on the baking sheet. Use your hands or a rolling pin to flatten the dough until it is 1/4-inch thick or less. If the dough starts to shrink back, let it rest for 5 minutes and then continue rolling.

4. Top the pizza: Spoon a few tablespoons of sauce into the center of the pizza and use the back of a spoon to spread it out to the edges. Pile on all of your toppings.

5. Bake the pizza: Using a pizza peel or the back side of a baking sheet, bake the pizza right on the baking sheet. C. Bake 10 to 15 minutes, until the crust is golden-brown and the cheese looks toasty.

6. Slice and serve: Let the pizza cool slightly on a cooling rack, just until you're able to handle it. Slice it into pieces and serve.

Our First Recipe We hope you will like it .

Paneer Pasanda recipe -

shallow fried paneer sandwiches in a smooth, creamy rich onion-tomato gravy.

RECIPE TYPE: Main
CUISINE: North indian, punjabi
SERVES: 4-5
INGREDIENTS (measuring cup used, 1 cup = 250 ml)
for paneer sandwiches:
300 grams paneer/cottage cheese
2 to 3 tbsp crumbled or grated paneer (can substitute grated cheese instead of paneer)
1 tbsp raisins, chopped
8 to 10 cashews, finely chopped or 2 tbsp finely chopped cashews
1 or 2 green chilies, chopped, about 1 tsp chopped green chilies
1 tbsp chopped coriander leaves/dhania patta
½ tbsp chopped mint leaves/pudina patta
¼ tsp red chili powder/lal mirch powder
1 tsp cumin powder/jeera powder
According to your taste salt
6 tbsp oil for frying
for corn starch paste:
½ cup corn starch
4 tbsp water
pasanda gravy:
onion paste:
2 medium to large onions or 150 grams onions or 1 cup heaped chopped onions
2 tbsp oil
4 to 5 tbsp water to grind the fried onions, add more if required
tomato paste:
3 medium to large tomatoes or 250 grams tomatoes or 1.75 cups roughly chopped tomatoes
10 to 12 cashews, halved or roughly chopped
½ inch cinnamon/dalchini
2 green cardamoms/chotti elachi
2 single thin strands of mace/javitri
2 cloves/lavang
1 cup water for cooking tomatoes
for cooking the gravy or sauce:
1 to 1.5 tbsp of the fried oil or fresh oil
½ tsp caraway seeds/shahjeera (substitute cumin/jeera if shahjeera is not there)
1 tej patta or indian bay leaf
½ inch ginger + 3 to 4 garlic, crushed to a paste in mortar-pestle or 1 to 1.5 tsp ginger garlic paste
¼ tsp turmeric powder/haldi
½ tsp kashmiri red chili powder or deghi mirch
½ tsp coriander powder/dhania powder
¼ tsp garam masala
¼ to ½ tsp sugar or as per taste
1 tsp kasuri methi/dry fenugreek leaves, crushed
1 cup water
2 tbsp low fat cream, 25% to 35% fat
2 tbsp chopped coriander leaves for garnish
salt as required
INSTRUCTIONS
preparing tomato paste:
in a frying pan or kadai take 1.75 cups roughly chopped tomatoes, 10 to 12 cashews, halved or roughly chopped, ½ inch cinnamon, 2 green cardamoms, 2 single thin strands of mace, 2 cloves and 1 cup water.
on a low to medium flame, stir and simmer this mixture till the tomatoes soften.
when the tomatoes soften, switch off the flame. some STOCK will be left in the pan and we will use it while grinding the tomatoes. let this mixture become warm or cool down completely before you grind.
add the cooked tomatoes-cashews-spices mixture along with the STOCK. no need to add any extra water while grinding.
grind to a smooth paste. there should be no cashew chunks or pieces in the paste. keep this paste aside.
preparing onion paste:
meanwhile, heat 2 tbsp oil in a pan and add 1 cup heaped chopped onions.
stir and saute the onions on a low flame. add a pinch of salt for the onions to brown faster.
once the onions turn to light golden, switch off the flame. let the onions cool.
now in a grinder jar, take the fried onions. add 4 to 5 tbsp water.
then grind the fried onions to a smooth paste. keep this paste aside.
assembling, stuffing and frying paneer sandwiches:
in a bowl or plate, take 2 to 2.5 tbsp crumbled or grated paneer (can substitute grated cheese instead of paneer), 1 tbsp raisins, chopped, 6 to 8 cashews, finely chopped or 2 tbsp finely chopped cashews, 1 or 2 green chilies, chopped, about 1 tsp chopped green chilies, 1 tbsp chopped coriander leaves and ½ tbsp chopped mint leaves.
now add ¼ tsp red chili powder, ½ tsp cumin powder and ¼ tsp salt or add as required.
mix everything and keep aside.
slice the paneer in triangles. now slice each triangle into two halves gently.
slice all triangles this way.
now place some of the stuffing on the paneer triangle.
cover it with its top slice gently. don't press. one paneer sandwich is ready.
MAKEall paneer sandwiches stuffed with the filling this way.
in a bowl, make a paste of ½ cup corn starch with 4 tbsp water.
dip the paneer sandwich slice in the batter.
turn over and coat from all sides. you can also use a spoon or small tongs to coat the slices.
place the paneer slices in a medium hot oil for shallow frying.
dip eacn triangle this way and then place more paneer triangles in the hot oil. do stir the corn starch paste before you coat the paneer triangles with it as the corn starch settles down.
when the base is golden, turn over and continue to shallow fry. you can also deep fry these paneer triangles.
now drain the fried paneer sandwiches on paper towels. keep aside.
preparing the paneer pasanda gravy/sauce:
in the same pan, in which we cooked the tomatoes, add oil. add 1 tej patta and ½ tsp shahjeera. saute till the shahjeera crackles. substitute cumin/jeera if shahjeera is not there.
add 1 to 1.5 tsp ginger garlic paste.
stir and saute till raw aroma of ginger-garlic goes away.
now add the tomato-cashew-spice paste. stir and saute for 3 to 4 minutes on a low to medium flame.
stir and then add the fried onion paste. stir very WELL and saute for 3 to 4 minutes.
add ¼ tsp turmeric powder, ½ tsp coriander powder and ½ tsp kashmiri red chili powder or deghi mirch. stir very well.
then add 1 cup water.
stir again very well.
simmer the gravy on a low flame.
if the gravy splutters a lot, then cover the pan with a lid.
simmer or saute the gravy till you see some oil specks on the top. the gravy will also thicken. about 4 to 5 minutes on a low to medium flame.
then add salt as required.
add ¼ to ½ tsp sugar as required.
stir and then add ¼ tsp garam masala, 1 tsp kasuri methi, crushed and 2 tbsp low fat cream.
stir till the cream is mixed evenly with the rest of the gravy.
now you can place the paneer triangles or pasanda in the gravy. or else you can place them in a serving tray or plate and pour the gravy from top as shown in the final pics.
coat the paneer pasanda in the gravy.
serve paneer pasanda hot garnished with some coriander leaves. best accompaniments with paneer pasanda are naan, tandoori roti, chapati, lachcha paratha, malabar paratha and jeera rice or veg pulao.
