Hi!
For quite sometime now, the famous Makaibari tea estate had rebranded its packaging and was selling tea, which I particularly wasn't much fond of. After the estate was sold out, the quality of tea that they were seeking under the 'Apoorva' branding didn't appeal to me.
Yesterday, in my local grocery store, I got to see this mini pouch. Makaibari Broken Orange Pekoe - 20 gms - INR 20. Fair enough. I got one for tasting.
Before opening the packet, the first thing I do, is to read the instructions - in detail. Because, different teas behave differently to water temperature, stepping time and also the quantity of tea leaves used. It is the responsibility of the manufacturer to guide the customer to brew the perfect cup.
Alas! Just go through the second image. They have randomly printed the steps, without maintaining the sequence. You get to have the tea in step 3 and in step 4 you steep it for 3-5 minutes.
Come on ! I'm sure you can do better. Just checking the prints before mass-production could have done it. You got an already-sorted business. You got a legacy. And this is how careful you are with it. A legacy is heavy and you need to have enough strength to carry it, leave alone glorifying it for the future generations.
And yes, today I realize how important it is to maintain this page.

Darjeeling Autumn Gold Black Tea by

Dry leaves :
Whole leaves ( > 1.5 cm). It has a warm green black color. Very light fresh citrusy roasted aroma.

Brew :
2 grams of tea leaves brewed in 100 ml of water at 95-98 degrees Celsius for 5 minutes.
Bright yellow colored light bodied brew.

Taste :
The first sip is citrusy and fresh. With further sips a sweetness was felt. Extremely smooth finish. The aroma is bright mountain forest dew kind of. Refreshing. This character is quite surprising for a autumn flush, but it's definitely a pleasant suprise. Leaves a grassy sweet aftertaste. No astringency at all.

Wet leaves :
It's weird, but I could smell fresh wild grassy rosemary. The leaves were bright green to dark brownish green.

Best time to have it:
Wake up to a sun-kissed winter morning, take the cup and get lost into your own world.

Food pairing:
The flavours are such that it will shine even with dark chocolate. I prefer to have it all by itself.

This man loved tea and fritters. Cha r telebhaja. Though this combination gives acidity to some, but it's the staple evening snack of the bengalis. If you want to visit this iconic shop, this is located at Hedua. Or rather if you are coming from Bethune College towards Shyambazar, you will find it on your left hand, after the second intersection.

And the last image is of the great leader himself. This statue is installed at the Shyambazar Five-point crossing.

Also a small story:
I studied in a two-century-old college. It has those giant pillars and staircases. Netaji happens to have studied in the same premise for a few weeks. It is said that to protest manhandling of Indian students, he pushed one of his professor, from the stairs. Needless to say, he was rusticated from the institution.

Those stairs always give me goosebumps.

Darjeeling First Flush Black Tea by

Dry leaves :
Broken leaves. Mix of light green, dark green, and brown leaves. black color. Fresh woody scent.

Brew :
2.5 grams of tea leaves were brewed in 180 ml of water at 95 degrees Celsius for 3:30 minutes.
Bright golden color light-bodied brew.

Taste :
Warm, fresh, and strong. It has a roasted hint to it. It finishes smooth and dry. It is a perfect strong morning cup, without bitterness to it. And leaves a fresh aftertaste. As the brew gets cold, a beautiful metallic tang is also deciphered.

Wet leaves :
Light fresh woody aroma.

Best time to have it:
Morning, after a deep slumber.
