Is that Amul Cheese? Some nights the table picks a lane. Last night the table had other plans.

Army brat life. Real estate in a city. The election outcome and what comes next. Someone who went for Indian Idol auditions purely for the feeling of it. Schrodinger's Cat and whether the table agreed with the physics or just the vibe. Hail Mary moments. The Devil Wears Prada.

Reality TV. Splitsvilla. Roadies. Hustle. TRP ratings and who actually controls them. Being loud in a crowd. Smuggling across borders. Matchmaking commissions. The Haldiram legacy.

Bangkok and the dealers who travel. Drunk and drowning stories. Presidential suites. All access passes. Garment Park. Intentional pauses versus awkward ones. Assumptions we make about strangers.

What real forensic work actually looks like. Government funding and where it quietly disappears. Police training. Legal loopholes that make you question everything.

One table. One night. No topic was safe.

Ho**ah is a craft. What does it take for a table to spend serious time discussing this?

Coal types, base setups, flavour combinations, cost, nothing was off the table. The kind of detail that makes you realise this isn’t a casual habit for some. It’s a full system.

From there, the conversation grounded itself in reality. Life in Dubai, specifically from a working class lens. The gap between perception and lived experience, and how different the city can feel depending on which side of it you see.

Food found its way back in, as it always does. Sourdough is clearly having a moment. Heirloom wheat is making a quiet comeback. And then the practical debate, induction cooking. Faster, cleaner, more efficient. But does it change the way we relate to food? Apparently some folks think food does not cook completely on an induction.

Language entered next. Hindi in Ranchi versus Hindi in Kolkata. A sharp observation. Kolkata Hindi feels almost gender neutral. Subtle, but once pointed out, hard to ignore.

Social boundaries followed. Smoking in front of children. Awareness versus habit. A topic that lingered just enough to stay with everyone as to how observant kids are.

There was a bit about the big lift man in the small lift but let's not make fun of him shall we?

And then, as most good tables do, we veered into chaos. A story involving a wrong door, the wrong timing, and a situation that escalated far quicker than expected with the world's oldest profession!

Last night’s conversation had range.

The Maheshwari community was the opening number. Its structure, its ability to connect instantly across the globe, and the way community dining brings people together… while also occasionally testing patience. Client tantrums, mismatched expectations, and the quiet art of managing it all without losing your mind.

From there, the table drifted to the land of the brave and free. Life in America came up. Specifically the idea of living in debt as a norm. A system that functions, but one that feels slightly unsettling when viewed from the outside.

Pregnancy, and everything around it, took centre stage. The joys, the anticipation, and the nervousness that follows. The idea of “ready bags” for both parents sparked its own comical discussion. Turns out preparation is not just physical, but mental.

That naturally led to a simple but loaded question. Why don’t men change their names after marriage? A question that lingered just long enough to make everyone think before moving on.

Somewhere in the middle of all this, the table briefly took on a new role. Matchmaking! For a few moments the table operated like a very efficient, very opinionated committee on a mission to make a match!

Craft entered the conversation next. What does it really take to design bespoke shoes? Materials, measurements, patience, and a deep understanding of the person wearing them. Far more complex than it seems.

And then, as tables do, we veered into food again. Can you really taste anything once the spice takes over? Or does heat quietly drown out everything else?

A table that moved between community, culture, modern life, and personal milestones with ease.

What do a safety pin, a winter meal in the mountains, and a joint family of 35 have in common? At Pizza Dojo, apparently … everything.

Last night’s table moved fast. One moment we were talking about jugaad in its purest form of the the humble safety pin that shows up in childhood games and the next we were deep into conversations about chefs in India quietly doing some of the most exciting work right now. Names like Garima Arora and Prateek Sadhu came up, alongside a few younger names shaping their own voice like Thomas Zacharias, Manu Chandra and Vineet Bhatia. A shared appreciation for chefs who are pushing Indian food forward without losing its soul.

That naturally led to a very specific dining memory. Eating at Naar in peak winter. The kind of meal where the cold sharpens everything from appetite to flavour to memory.

We shifted closer home from Naar! On matters of life in a joint family of 35 people under one roof. One kitchen. Endless logistics. Rotating meals, shared responsibilities, and the kind of chaos that somehow just works.

COVID made a quiet appearance next. Not as disruption, but as a period that forced people to learn things they otherwise wouldn’t have. Cooking, slowing down, rethinking routines. Oh and also the importance of chotu, ramu, jha and the mashis.

Then came school memories. Specifically the strange mystery of being late despite living barely 200 metres away from school. A peculiar problem with no real explanation.

Food experiments followed. Paneer made from lauki juice and other green vegetables. Equal parts curiosity and courage.

And of course, cricket. Because no Indian table is complete without it. This time with a nod to the rise and presence of the women’s game in India, and how the conversation around it has steadily grown. Legends those girls are!

There’s a certain rhythm to a table where everyone has travelled enough to compare cities, meals and mishaps from around the world. The conversation tends to move quickly.

Last night’s table had that energy. Curious, well travelled, and globally aware.

We began with a rite of passage many at the table remembered well . The first international trip taken right after finishing school. In one memorable case, two newly minted young men had their travel ambitions swiftly redirected. Bangkok was firmly vetoed and Mauritius was declared the more appropriate destination. A compromise; to the land of honeymooners, perhaps, but an international trip nonetheless.

From there the spotlight turned toward the kitchen. How exactly does Pizza Dojo land on its flavour combinations? Is it method, madness, or simply curiosity about ingredients that normally don’t meet each other on a pizza?

Naturally the conversation moved to restaurant strategy. One guest shared their quiet hack for enjoying great meals without battling crowds or chaos. Timing, table choice and a bit of patience apparently make all the difference.

Soon the table was listing the city’s “must order” dishes. That one dish a particular restaurant does better than anyone else. A surprisingly long list began forming across neighbourhoods.

Portion control entered the chat next, especially when running a food business. Balancing generosity with sustainability is apparently a universal struggle.

And of course, every seasoned traveler eventually has a story about miscalculating finances at the worst possible time. Someone at the table recalled running dangerously low on funds right before dining at a rather fancy restaurant abroad. A situation that apparently teaches budgeting faster than any finance class ever could.

One guest, however, had clearly mastered the art of appreciation. By the end of the evening we witnessed perhaps the cleanest plate we’ve seen yet! Not a crumb left behind.

All in all, a table full of worldly curiosity and very good stories.

Thre’s something lovely about a table where generations collide. Youthful confidence meets experienced restraint and the conversation takes on a life of its own.

Last night’s table had a little bit of everything. A Fastest Fingers First winner, a couple, and a family of four. The liveliest voice belonged to a 19-year-old college firecracker whose wonderfully unfiltered commentary kept the table smiling even when she found herself at the receiving end. What a sport!!

We began with supper clubs. The city has quite a few now, each with its own quirks and philosophy around food. This quickly led to a practical observation. Landing up at an omakase while being a picky eater might just be the ultimate social faux pas.

Along the way we discovered a guest who was surprisingly well versed in pizza crusts. Thin, airy, chewy, crisp. Wonder why I say the crust might quietly be the most important part of the pizza.
That opened the door to ingredients.

Could local cheeses hold their own? Bandel made a strong case. Yak cheese from the mountains got a mention, and someone spoke about cheeses from Kashmir. The idea of a truly local cheese pizza clearly had a few supporters.

Pets then entered the chat. Specifically the strange way pets and children grow up together, often forming their own quiet alliances within the household.

Entrepreneurial ambitions followed. One guest is seriously considering starting a home grown ice cream brand. For this we wish her the best of luck 🤞🏽

Naturally the table had opinions.
And just as the evening seemed to settle, the youngest voice reopened the debate by asking whether elite schools in big cities really need “donations”.

That question kept the generational clash alive till the very end.
