Monday stretchin ! ⁣⁣

For a while now I’ve been stepping in only when the boys get a bit overwhelmed with orders at the pizzeria. Today was a bit different. My main pizza boy had to take off and I had to step in full time. Stretching the pizza doughs out, getting my other trainee boys to top up the pizzas and then baking them one after the other. Got me enough time to think. Maybe tweak the dough a bit. I like the dough now but hey, it could always be better! Been playing around with topping ideas in my head too. I need to get a few more pizzas on the menu by the weekend. Maybe a dessert pizza too? What toppings would you guys want to see on the pizza? 😁⁣⁣
Enough rant. I’ve got to bake tomorrow as well ! 🙂🍕❤️⁣⁣

Quail egg yolks and bacon over some fresh buffalo mozzarella and finished off with crumbly Belper Knolle. All this on a contemporary Neapolitan style base made out of an interesting blend of flours and fermented over a few days using two different preferments. ⁣

Can breakfast get any better ? 🤷🏽‍♂️🙂🍕❤️⁣⁣

𝘓𝘰𝘤𝘬𝘥𝘰𝘸𝘯 𝘚𝘶𝘯𝘥𝘢𝘺 𝘥𝘰𝘯𝘦 𝘳𝘪𝘨𝘩𝘵 ! ⁣

Have I told you how therapeutic dough is? The perfect way to destress! ⁣
Making good dough is not a walk in the park. It is time consuming. There are so many variables which can go wrong. Quantities, temperature, timing, the way you handle it and so on and on. You need to know which flour and environment would work with your recipe and if it doesn’t , you need to figure out how to tweak it to suit the flour and the space around you. It’s always a lot of trial and errors and there’s never a perfect recipe! ⁣
It can be a lot frustrating when it goes wrong and it sure will ! But when you give it the time and patience it deserves, it gives back so much more in return. I’m going to say this again. Dough is therapeutic! ⁣
If you haven’t tried it yet, please do. If anyone is looking for a way to destress, give this a shot. ⁣
Flour, water, yeast and salt. ⁣
That’s a good place to start. And oh yea, lots of love. 🙂⁣

You either love it or hate it ! Or that’s what I thought because the first time I tried it out, not everyone liked it at home even thought me and Samantha loved it! I really did not expect everyone to like this one when I first gave it out. But surprisingly this is the most ordered pizza. And it’s always on every menu! I do minor tweaks on it but the basic flavours remain the same. ⁣
This one is a pizza bianca with ⁣
Fresh buffalo mozzarella⁣
Portobello mushrooms ⁣
Caramelised onions⁣
Cream cheese⁣
Pecorino Romano ⁣
And some white truffle oil. ⁣

Umami heaven ! ⁣

I remember walking in there the first time when they opened up and I fell in love with that space right away. Simple, laidback and oh so green! And it’s been our go to place ever since. Every time me and Samantha are in town, we keep wanting to try out different places but we end up at FT almost every time. And it’s not just the place, the vibe or the fact that they keep every nook and corner so clean. We leave the space feeling content and not feel bloated later. And that I feel is what takes me back there over and over again. Places like French Toast] are the reason why I even want to get into the hospitality business. ⁣⁣⁣

So when FT’s and came over to Irinjalakuda to try out the pizzas, I was so kicked! I figured that I must be doing something right . And I immediately knew where my first ‘pop up’ in Kochi would be. I guess I had decided that in my mind even before I spoke to Ayaz about it. I was quite certain that he’d be up for it 😊.⁣⁣⁣

Pork belly, smoked to perfection. Sliced thick enough so that it doesn’t dry out in the oven. Smoky, salty, hearty and full of umami ! ⁣⁣

Throw these two together on a well fermented dough base along with some Italian tomato sauce and some fresh buffalo mozzarella and you have a hearty meal in front of you ! ⁣⁣

Go Goa!⁣

I’ve been topping my pizzas with these spicy chorizo for a long time now and I have to say that it’s just Goa on a slice for you! The chorizo can get a bit overpowering at times. So moderation is always the key. ⁣
The best part about the chorizo is that it blends perfectly well with the slightly tart/ sweet tomato sauce and the creamy buffalo mozzarella. And then the beautifully light crust with those perfectly charred spots just wraps it all together oh so well ! Writing about it is making me drool now. Zucchine E Olive⁣

A Classic Neapolitan style pizza topped with Italian tomato sauce, fresh buffalo mozzarella, fresh zucchini slices, kalamata olives, pecorino romano and extra virgin olive oil. Vegetarian pizzas are equally good, I must say! 😁⁣

One of my all time favourite topping for pizza is the Italian cured Salame Napoli. Salty, with a hint of pepper and slightly tart, these thin slices from Naples are perfect over a piping hot pizza! If you fancy pork, you will love this!⁣
