As-salāmu ʿalaykum Everyone !!

I hope everyone is fine, after a very long time I am posting here😊. I got busy with my 2 babies and kids, being a Mum is not easy 🙈 and wasn't able to follow up and post the recipes.

Rooh Afza Lemonade

Ingredients :
1- 2 Can Sprite/Soda (depending on your glass size.)
4-5 tbsp Rooh Afaz Syrup
1½ tbsp lemon juice

Optional
Crushed Ice cubes
Mint leaves for garnish
Slice of lemon wheel

Method
In a tall glass, add Rooh Afza syrup, lemon juice and chilled soda then mix well.
Add ice cubes and garnish with lemon wheel and mint leaves.
Serve cool and Enjoy it.

Ingredients:

1 cup Kala chana /Black Chickpea (soak overnight and drain )
1 Onion (finely chopped)
1 tbsp Ginger garlic paste
1 tbsp Red chili powder
¼ tbsp Turmeric powder
Salt – to taste
4 tbsp Oil

For Garnish

Coriander leaves (finely chopped )
Mint leaves (finely chopped)
Onion (finely chopped)
2 tbsp lemon juice

Method

In a large non-stick saucepan/Khadhai add oil at medium heat, add chana , ginger garlic paste, red chili powder & turmeric powder and shallow fry the chana until crispy on the outside.Add chopped onion, salt and lemon juice shake the saucepan. Remove from the heat.

Garnish with coriander and mint leaves .

Tandoori Chicken

Ingredients:

1st Step Marination

4 chicken thighs skinless
1 tbsp Red chili powder
4 tbsp Lemon Juice
Salt -to taste

2nd Step Marination:

1 cup Plain Yogurt
1½ tbsp Red chili powder
1 tbsp Ginger and Garlic Paste
1 tbsp Turmeric Powder
1 tbsp Garam Masala
2 tbsp Lemon Juice
1 tbsp cumin powder
½ tbsp Food colour -Red
½ cup Oil
Salt to taste

For Baking:

Baking Tray
Aluminum Foil (optional)

For Garnish:

Chaat masala(optional)
Lemon wedges
Onion rings
Coriander (finely chopped)

Method

Wash the chicken legs and drain well and place chicken on a large plate.Now with a sharp knife make a deep slits on each side of the chicken leg.
In a mixing bowl,add red chili powder,lemon Juice and salt to taste.Rub spices chicken inside and out all-over chicken,Using fingers and let it marinate and cover the bowl with a plastic wrap and
leave for the Marinading for 1/2 an hours in the refrigerator.

After 1/2 an hours marination,
In a mixing bowl add 1 cup Plain Yogurt,red chili powder,ginger and garlic paste,turmeric powder,garam masala,lemon Juice
cumin powder and food colour and mix well.Let it marinate and cover the bowl with a plastic wrap and leave for the marinading for 2 hours or for overnight in the refrigerator.

Preheat oven to 350 degree ºF (180 degree ºC)
In a large non stick baking pan, place Chicken and drizzle with 2 tbsp oil.Cover the ends of bones with a small piece of aluminum foil(optional.

Bake uncovered for 1/2 an hour in the preheated oven,
check the chicken for every 10 minutes or until the chicken is golden and Let the juices run out of the chicken and dry,until its done.
Remove the chicken from the oven after 10 minutes.

Now grill in a electric grill at a medium heat or cook over an open fire or roast it in a pan and add onion rings stir until tender and translucent,sprinkle some Chat masala and lemon juice on top of chicken at a medium heat about 5 minutes, Remove pan from heat.
Let it rest about 15 minutes.

Garnished with fresh Lemon wedges,Onion rings and coriander leaves.

Serving dish with Naans,Paranthas.....

Pyaaz Ke Pakode | Onion Pakode | Onion Fritters

Ingredients for Pakora:

1¼ cup Besan (Gram Flour )
1 onion (peel and cut into round thin slices)
¼ tbsp Soda Powder
1 tbsp Red chilli powder
¼ tbsp Turmeric powder
1 tbsp Ginger paste and Garlic paste
Coriander leaves
Mint leaves
Salt to taste
Oil

Method for the Pakora

Peel, wash and slice onions into thin roundels..
In a bowl, add Besan,red chilli powder,turmeric powder, salt, soda powder, mix the dry Ingredients well add water mix to form a thick, smooth batter/smooth consistency.
(Note :Batter should not be very thick)

Add onions,ginger paste and garlic paste,coriander and mint mix well if needed sprinkle little water and mix well again and leave for 5-8 minutes.

Meanwhile in a saucepan add oil at medium heat,
Let it fry until it is golden brown, about 3-5 minutes at low heat.

Remove from the saucepan with a slotted spoon and drain on kitchen paper.

Enjoy it..!!!

Mango Lassi

Ingredients :

2 medium Mangoes (peeled,chopped and stone removed)
1 ½ cups - Plain Yogurt
½ cup - Milk
1 tbsp Sugar to taste
few strands - Saffron threads (optional)
Chopped Nuts for garnish (optional)

Method

Wash and peel the mango and cut into medium cubes/pieces.
Add the mango pieces,plain yoghurt,milk and sugar into a blender.
Now blend it until its smooth consistency.
Garnish with chopped nuts and saffron threads.
Serve cool and Enjoy it :)

Hyderabadi Meethi Dal

Ingredients:

1 Cup Tuvar dal (Yellow lentils)/Masoor Dal (Red Lentils)
1 tbsp Ginger garlic paste
¼ tbsp Turmeric powder
3-4 green chilies finely chopped
Salt – to taste

For seasoning (Baghar)

6 tbsp Oil
slice of 2 small onions (Fried Onions)
1 tbsp Ginger garlic paste

For Garnish:

Coriander and Mint leaves and Fried Onion (finely chopped )

Method

In a pressure cooker at medium high heat, add tuvar dal /masoor dal,ginger garlic paste,green chilies & turmeric powder.

Let pressure cook for about 10-15 minutes until the lentil is tender(paste).

Then at medium heat,add salt to taste,let it cook for 10 minutes.

For seasoning (Baghar)

In a saucepan add oil at medium high heat,add slice of 2 small onions,after few seconds add 1 Ginger garlic paste & stir until it is golden browns remove from the heat.

Then pour the Baghar over the lentil soup and let it cook for 5 minutes & remove from the heat.

Garnish with coriander and mint leaves .

Enjoy It with Roti:)
