Bajra Khichdi – Sardiyon Wali Garma-Garam Khichdi, Desi Ghee Ke Saath
Samagri – 3-4 logon ke liye:
Bajra/Pearl Millet – 1/2 cup = 100 gram, mota k*ta
Moong dal dhuli – 1/4 cup = 50 gram
Ghee – 2 टेबलस्पून
Jeera – 1 टीस्पून
Hing – 1/4 टीस्पून
Adrak – 1 टीस्पून, kaddukas
Hari mirch – 1, lambi kati
Haldi – 1/2 टीस्पून
Namak – swad anusar
Paani – 4 cup = 1 litre, garam
Hara dhaniya – 2 टेबलस्पून, kata
Banane ka tarika – Total time: 40 minute
Step 1: Bajra bhigo do – 4 ghante ya raat bhar
Bajra ko mixer mein 2-3 pulse chala kar mota k*t lo. Ya okhli mein koot lo.
Kuta bajra + moong dal ko dho kar 4 ghante ya raat bhar bhigo do. Ye step skip kiya to khichdi pakne mein 1 ghanta lagega.
Bhiga bajra-dal chhaan lo.
Step 2: Tadka + Pressure Cook – 20 minute
Cooker mein 1 टेबलस्पून ghee garam karo.
Jeera, hing, adrak, hari mirch. 30 second bhuno.
Bhiga bajra + dal daalo. 1 minute bhuno.
Haldi + namak + 4 cup garam paani daalo.
Dhakkan band. Medium aanch par 4 seeti. Gas band.
Pressure khud nikalne do. 10 minute.
Step 3: Finish karo – 2 minute
Dhakkan kholo. 1 टेबलस्पून ghee + hara dhaniya daalo. Mix karo.
Garam-garam serve karo. Upar ghee ki dhara, saath mein dahi, gud, lehsun chutney.
Tips:
Jaldi wali – Raat ko bhigona bhool gaye? Kuta bajra 10 min garam paani mein bhigo do. 1 seeti extra lagao.
Bina dal – Sirf bajra ki khichdi bhi banti hai. Paani 5 cup kar do.
Sardiyon ka combo – Saath mein til-gud, sarson ka saag, bajra roti. Body garam rakhti hai.
Bacchon ke liye – Hari mirch skip. Ghee zyada daalo. Mashed banana ke saath do.
Store – Fridge mein 1 din. Garam karte time thoda paani daalo warna sukh jayegi.
Fayde: Iron + Magnesium king, haddi/jodon ke dard mein fayda, cholesterol kam, sardiyon mein body garam rakhe, gluten-free. 1 katori = 180 cal, 6g protein.
