A Mozzarella Story

There is a moment when milk stops being milk.
A little heat. A little patience. A careful hand. Proteins find one another, curds gather, and what is once liquid begins to stretch, fold and gleam into mozzarella.

At Milk Alchemy, we followed that transformation from beginning to end—understanding the science that made it possible, the craft that refined it and the wonder of making one of the world's most beloved cheeses with our own hands.

We tasted our way through fresh mozzarella along with a selection of cheeses, comparing textures, asking questions and discovering how technique, microbes and time shape flavour, and left with a deeper appreciation for the extraordinary lives hidden inside ordinary ingredients.

Swati Singh, farmstead cheesemaker, breaks down the science and the craft — then teaches you the skill to make and stretch the cheese yourself. Five courses. Many ferments. One table.

Fermentation feels new because many of us met it through kombucha and sourdough. But it's old technique, everywhere — a way of preserving and building flavour. India's regional kitchens have their own long, distinct versions of it: kanjis, rice and fruit wines, buttermilk and batters left to turn.

Chef Chetna of Omo brings some of those traditions to one table.
