Kadhi Chawal - An Indian recipe made up of high protein rich Curd or Yogurt blended with Bengal Gram fluor based curry and fritters with a strong hint of Asafoetida and Dry Red Chillies. You can also make a tempering of Ghee and Kashmiri Red Chilli powder for adding that special signature taste. Enjoy with steamed rice or flatbreads (Chapattis).
Recipe at a Glance
Before starting anything prepare the following items;
Finely Chopped Onions or Shallots, Green Chillies, Fenugreek Seeds, Gram Flour, Blended Curd or Yogurt, Cooking Oil or Clarified Butter, Asafoetida, Turmeric Powder, Red Chilli Powder, Cumin Seeds, Dry Red Chilli, and Water and Salt as per the need and desired consistency.
1. Take a deep pan.
2. Add a little bit of cooking oil.
3. Sauté Cumin Seeds, Fenugreek Seeds, Asafoetida, Dry Red Chillies, Chopped Onions & Green Chillies on a medium flame for 5 minutes.
4. Let it cool down a little bit by turning the heat off.
5. Now add the blended yogurt in water in a recommended ratio of 1:5. That is 1 part yogurt in 5 parts of water.
6. Mix a ladle full of Gram fluor in it with a pinch of Turmeric and Red Chilli Powder as per your desire. Come on feel free to do that. Do not add salt at this point.
7. Turn the heat on. Keep it on medium high and keep stirring the contents continuously until the curry starts boiling to avoid the coagulation of proteins in Curd or Yogurt used as Curry Base.
8. Turn the heat low and cook it for another 25-30 minutes. At this point add the salt as per taste.
9. Take another pan and heat the oil on medium high heat. Now take some water and mix the Gram flour with it until it becomes a paste like solid. Using a spoon drop it in the heated cooking oil very carefully to make fritters. Fry until golden brown.
10. Using a strainer take out the fritter from oil and add directly into the boiling Curry (Kadhi).
11. Cook for 5 more minutes and add chopped herbs like Cilantro on the Kadhi.
12. Serve hot with Steamed Rice or Chapattis (Indian Flatbreads).
