Kadhi Chawal - An Indian recipe made up of high protein rich Curd or Yogurt blended with Bengal Gram fluor based curry and fritters with a strong hint of Asafoetida and Dry Red Chillies. You can also make a tempering of Ghee and Kashmiri Red Chilli powder for adding that special signature taste. Enjoy with steamed rice or flatbreads (Chapattis).

Recipe at a Glance

Before starting anything prepare the following items;
Finely Chopped Onions or Shallots, Green Chillies, Fenugreek Seeds, Gram Flour, Blended Curd or Yogurt, Cooking Oil or Clarified Butter, Asafoetida, Turmeric Powder, Red Chilli Powder, Cumin Seeds, Dry Red Chilli, and Water and Salt as per the need and desired consistency.

1. Take a deep pan.

2. Add a little bit of cooking oil.

3. Sauté Cumin Seeds, Fenugreek Seeds, Asafoetida, Dry Red Chillies, Chopped Onions & Green Chillies on a medium flame for 5 minutes.

4. Let it cool down a little bit by turning the heat off.

5. Now add the blended yogurt in water in a recommended ratio of 1:5. That is 1 part yogurt in 5 parts of water.

6. Mix a ladle full of Gram fluor in it with a pinch of Turmeric and Red Chilli Powder as per your desire. Come on feel free to do that. Do not add salt at this point.

7. Turn the heat on. Keep it on medium high and keep stirring the contents continuously until the curry starts boiling to avoid the coagulation of proteins in Curd or Yogurt used as Curry Base.

8. Turn the heat low and cook it for another 25-30 minutes. At this point add the salt as per taste.

9. Take another pan and heat the oil on medium high heat. Now take some water and mix the Gram flour with it until it becomes a paste like solid. Using a spoon drop it in the heated cooking oil very carefully to make fritters. Fry until golden brown.

10. Using a strainer take out the fritter from oil and add directly into the boiling Curry (Kadhi).

11. Cook for 5 more minutes and add chopped herbs like Cilantro on the Kadhi.

12. Serve hot with Steamed Rice or Chapattis (Indian Flatbreads).

Schezwan Fried Rice - Veg

For preparing the Schezwan fried rice - veg for 4 persons we need;

Ingredients;

Carrots (Diced) - 2 medium
Onions (Chopped) - 2 large
French (Chopped) - 5-6 beans
Cabbage (Chopped) - 1 portion
Green chillies - 2-3 medium
Spring onion (Chopped) - 4 stems
Coriander (Finely chopped) - 50 g
Red Chillies - Guntur or Kashmiri
Salt to taste
Chilli Vinegar
Soy Sauce
Vegetable Oil
Rice - 2 Cups
Garlic - 3-4 cloves
Ginger Juliennes - 1 medium
Water - For Sauce
Sugar - As taste enhancer
Black Pepper
A pan or Wok

Instructions to make;

For preparing Schezwan sauce;

Boil some red chillies in water and make a paste.

Take a pan and pour 1tbsp cooking oil and heat.

Add some finely chopped onions, garlic and ginger and sauté for 2-3 minutes. Do not over cook.

Add some sugar half teaspoon with some black pepper powder, 1 teaspoon soy sauce and 1 teaspoon vinegar. Sauté for another 2 minutes until you see oil leaving the paste.

Take out the Schezwan sauce prepared in a bowl and keep aside.

For preparing Schezwan fried rice - veg

Boil the rice and ok nce cooked strain out extra water and wash in running cold water and keep rice in refrigerator for atleast 2 hour before preparation. Works best if you will use overnight refrigerated rice.

Take a pan or wok.

Heat it on medium high flame on a gas stove or heat if using induction cook top.

Add some cooking oil to it and heat.

Add finely chopped onions and sauté for 2-3 minutes on medium heat.

Add chopped beans, chillies, spring onion, carrots and cabbage to it and sauté for another 3-4 minutes on medium heat.

Add some vinegar and soy sauce and cook for 1 minute.

Take out rice and grease them in oil, add rice to pan or wok.

Add Schezwan sauce to it and fold the rice to smear in the sauce and vegetable mix.

Mix everything gently. Keep the flame medium.

Sprinkle some water on this mixture to make it rice soft.

Add salt to taste. Cook for 2-3 minutes.

Turn off the heat. Add some chopped coriander or cilantro and mix the rice.

Serve in plates and garnish with Coriander leaf.
