I have been trying soup diet for the last 10 days and thought it would be a great idea to post the easy and healthy soup recipies which is also helpful in losing weight.
Pumpkin- Carrot Soup
Cooking time- 20 mins
Serves- 3
Pumpkin- 400g
Carrot- 3 small sized
Topping- half bell pepper cut in thib strips and roasted or fried
Olive oil/butted- 1 tsp
Chilli flakes- 1/4 tsp
Basil/oregano- a pinch

Preparation Method
Cut the pumpkin into bigger pieces , carrots into chuks .
Pressure cook them with little salt and water .
Blend them in a mixed or blender into fine paste and add half a liter of water to this.

In a small fry pan, stir fry the bell peppers with chilli flakes and basil with a tsp of olive oil or butter and keep them aside

Boil the soup in a heavy bottomed vessel and add these toppings. Add salt and extra chilli as per taste. You can also add a little milk to boil to get a slight creamy effect. Do not add fresh cream if you are calorie conscious.

Serve hot with toasted whole wheat bread sticks for a fulfilling morning breakfast.

If you are only on soup diet , pls make sure to have two to three bowls as per your body's requirement.

These are low calorie soups and doesnt add to your calorie count much.

Small Millets can be used as an alternative for regular rice as they are complex carbohydrates and releases energy slowly and is highly recommended for diabetic patients and people who are looking at reducing weight. We will add small millets (fox millet, kodo millet, finger millet recipes)

Recipe for Morkuzhambu. Pics to be posted soon :)
To grind
Grated Coconut 1/2 coconut
Rice flour-1/2 tsp
Red chillies-3-4 (depending on the spice levels)
Green Chilli-1

To saute
Gingely oil or Veg oil-1 tsp
Mustard-1/4 tsp
Fenugreek seeds-a pinch
Curry leaves- 2 sprigs
corriander leaves-chopped a little

Medium sour butter milk or beaten curds-2 cups
Salt to taste
Asofoetida-a pinch (optional)

Steps
1. Make a fine paste of coconut, rice flour, green and red chillies.
2. Add the paste to beaten sour curds and mix well so that there are no lumps
3. Add a tsp of salt to the mixture and add more if needed and mix well
4. Now take a kadai and add a tsp of oil
5. Add mustard seeds, fenugreek seeds and curry leaves and allow them to splutter
6. Add the mixture to this and allow for a foam layer to form. Do not boil the mixture as it might become too watery. Just wait for a layer of foam to form on this and switch off the flame.
Serve hot with rice or fried rice or rice noodles(Sevai). It'll be an awesome combination.
