Bendekai Gojju (Okra Curry) Recipe
Ingredients:
Okra (bendekai) – 250 gms (chopped)
Tamarind – 1 small lemon-sized ball (soaked)
Jaggery – 1 tbsp
Grated coconut – 2 tbsp
Sambar powder – 2 tsp
Mustard seeds – 1 tsp
Curry leaves – a few
Oil – 2 tbsp
Salt – to taste
For tempering:
Mustard seeds – 1/2 tsp
Dry red chilies – 1-2
Curry leaves – a few
Steps:
1. Prepare Okra:
Wash, dry, and chop the okra.
Sauté in 1 tbsp oil until the stickiness reduces.
2. Make the Base:
Extract tamarind juice and mix it with sambar powder, jaggery, and salt.
3. Cook:
Heat 1 tbsp oil in a pan, add mustard seeds and curry leaves.
Pour the tamarind mixture and let it simmer for 5-7 minutes.
4. Add Okra:
Add sautéed okra to the gravy. Cook for another 5 minutes until flavors blend.
5. Finish:
Grind coconut into a fine paste and mix it into the curry.
6. Tempering:
Heat oil, add mustard seeds, red chilies, and curry leaves. Pour over the curry.
Serve hot with steamed rice.
