Punjabi Chicken Masala

Cooking Time: 1 hour
Serves 4 people

Ingredients
Whole Chicken 1.5 kg
(clean and washed under cold water)
- For Marination:
ginger & garlic paste 1 tbsp
red chili powder 1 tbsp
salt to taste
lemon juice 1 no.
- For Cooking:
cooking oil 1 tbsp
butter 1 tbsp
cumin seeds 1 tbsp
bay leaves 2 nos.
cinnamon 1 no.
black cardamom 1 no.
green cardamom 3 nos.
black peppercorn 8 nos.
cloves 6 nos.
onions chopped 2 nos. (medium size)
ginger & garlic paste 1 tbsp
Tomatoes chopped 2 nos. (medium size)
salt to taste
turmeric powder 1 tsp
Kashmiri chili powder 1 tbsp
red chili powder 1 tsp
coriander powder 1 tbsp
yogurt \ curd half cup
garam masala powder 1 tbsp
kasoori methi 1 tsp
ginger julienne 1 tbsp
green chilies 2 nos.
coriander leaves chopped
lemon juice 1 no.
water as required
- For Garnis:
ginger juilliens
chopped coriander
onion rings
lemon

Method:
- Take a whole chicken, clean it, and wash it under cold water. Cut the chicken into curry pieces.
- Put the chicken in a bowl and marinate it with ginger & garlic paste, red chili powder, salt, and lemon juice. Marinate the chicken for 1 hour.
- In a pan, add cooking oil and butter. When the oil is hot, add cumin seeds, whole spices, and chopped onions. Fry for 10 minutes on medium flame.
- When the onions are nicely brown, add the ginger and garlic paste. Cook for 5 minutes on a low flame.
- Now add tomatoes and salt, cook for 8 minutes on medium flame.
- Once tomatoes are nicely cooked, add powdered spices and yogurt \ curd. Mix well and cook for 5 minutes on medium flame.
- Add the marinated chicken, mix well, and coat the chicken well with the masala. Cover and cook for 10 minutes.
- Now add garam masala powder, kasoori methi, ginger julienne, green chilies, salt, coriander leaves, and lemon juice. Add water, mix well all the ingredients with the chicken. Now again cover and cook for 10 minutes.
- Punjabi Chicken Masala is Ready.
- Serve the Punjabi Chicken Masala Hot.
- Garnish with ginger julienne, chopped coriander, onion rings, and lemon.

Prawns Koliwada

Prawns Koliwada is a spicy fried Prawns dish, relished as a starter in restaurants and also a finger food for our parties.
The name of this dish comes from North Indian immigrants of state of Punjab, who put up stalls selling it in Koli community called Sion Koliwada in Mumbai.
Deep-fried, crunchy prawns can be identified by their signature red color.
The prawns are flavorful mix of ginger garlic paste, red chilli powder, cumin powder, lemon juice, gram flour balancing out the flavours just right. If you are a seafood lover then Prawns Koliwada is the dish for you. An ideal starter or snack for a seafood lover. You can serve it with sprinkling of some chaat masala on top of it.
