In May 2020 I returned to Ireland after over 20 years living and working abroad. I can still remember starting my working life terrified, as a teenager in the hospitality industry. Little did I know way then that I would spread my wings and fly to many places world-wide. Throughout th
is time I worked in an array of different styles of bars, restaurants, hotels, & cruise ships. Through this I gained an abundance of experience in many supervisory and managerial roles to becoming a confident and experienced manager. Somehow during my time away, I found myself on board one of the largest and most innovative cruise ships in the world, the Explorer of the seas working as a cocktail bartender. This was where I found my taste for and passion for making delicious tasting cocktails with over 20 bar locations on board the ship, none of which were alike unique drinks / cocktail menus to suit each location. The choices were endless and enabled much room for learning and gaining expertise. I also had the privilege of working onboard the Allure of the Seas, which biggest ship in the world at the time. On board I was initially employed as cocktail bartender then head bartender and supervisor. I increased my knowledge of cocktails and experience in making them whilst on board. By the end of 2013 and into 2014 I returned to management in bars & restaurants. During my time managing in bars & restaurants I was forever introducing cocktails and experimenting on my own. The love and passion I had gained for making cocktails never left me. So on my return to Ireland in 2020 I made the decision not to lose this love and passion, but to share this with other, which brings me to:
