Episode 3 of Fahad’s unofficial (official) cooking show. A traditional Pakistani Chicken Karahi made simple with guest cooks Saleem & Shamim.
This is the perfect recipe for busy evenings, when you don’t have many ingredients in the fridge, but still want something fresh, comforting and full of flavour.
Ingredients:
• 2 chicken breasts, diced
• 3 tbsp oil
• ½ tbsp ginger & garlic paste
• 3 tomatoes, chopped
• 1 green chilli, chopped
• 2 tbsp yoghurt
• 1 tsp cumin seeds
• 1 tsp coriander seeds, crushed
• ½ tsp salt
• ½ tsp red chilli powder
• ½ tsp turmeric
• ½ tsp black pepper
To garnish:
Fresh coriander, thinly sliced ginger & green chilli
Optional: a pinch of garam masala
Method:
1. Heat the oil in a frying pan or karahi over medium-high heat. Once hot, add the ginger & garlic paste and sauté briefly until fragrant.
2. Add the diced chicken and sauté for 3–4 minutes, allowing it to pick up a little colour.
3. Add the chopped tomatoes and green chilli. Cook for another 2–3 minutes, stirring well.
4. Add the salt, red chilli powder, turmeric and black pepper. Mix everything together and allow it to simmer for a few minutes as the tomatoes begin to break down.
5. Add the yoghurt and stir well. Continue cooking until the chicken is cooked through and the sauce becomes rich and glossy.
6. Once you see the oil beginning to separate and rise to the surface, your Karahi is nearly ready.
7. Add the cumin seeds and crushed coriander seeds and cook for a final 2–3 minutes.
8. Dish it up and finish with plenty of fresh coriander, ginger slices and green chilli. Add a small pinch of garam masala if you like.
