Who doesn't love yummy ice cream when the sun is out! Try out my Homemade Lemon Ice Cream recipe. It's delicious!! It is a great one to make with the kids. 🥣

A zesty, creamy treat you’ll crave all summer long!

Lemony, light, and so easy to make! 🍋❄️

Ingredients:

3 egg whites
2 egg yolks 🥚 (use good quality organic or free range eggs)
450 ml cream 🥛
100 g castor sugar
Juice of 2 lemons 🍋
Zest of 1 lemon 🍋

Instructions:

1. Whip the cream soft peaks form.

2. Mix the castor sugar into the whipped cream

3. Lightly whisk the egg yolks with a fork, then mix into the cream mixture. Set aside.

4. Beat the egg whites until very stiff (they should not move when the bowl is tilted).

5. Gently fold the cream mixture into the stiff egg whites—take your time!

6. Add the lemon juice and zest. Fold in carefully.

7. Transfer to a sealed container and freeze overnight.

8. Scoop and serve the next day—refreshing perfection!

Yes Peeps, it's time to make your Christmas pudding!

Mine is tucked away in the corner of a kitchen cupboard only to be taken out to splash a bit of brandy on every few weeks until Christmas day.

I've used this recipe for years and it's also part of my Christmas cooking classes so get onto my website for the recipe and make it this weekend. You'll be so happy in Christmas day that you did this!!
