Mark began his journey in hospitality from an early age, working alongside his father and learning the strong foundations, discipline, and work ethic that are essential within the industry. Those early experiences gave him a solid grounding in traditional kitchen operations and helped shape his passion for food and cooking.
Over the years, Mark continued to develop his skills and broaden his experience through a variety of professional kitchen environments, building a strong understanding of high-volume service, kitchen organisation, food safety, and teamwork. His dedication to improving his craft has seen him grow into a confident and dependable chef with a genuine passion for quality food and continuous learning.
Since joining the team at the Villa Rose Hotel, Mark has continued to evolve as a chef, expanding both his knowledge and creativity by exploring food and cooking techniques from a different perspective. Working within a fast-paced professional environment has allowed him to refine his approach to modern cuisine while maintaining the strong fundamentals that have always been central to his cooking style.
Today, Mark plays a key role within the kitchen brigade at the Villa Rose, particularly in Fara's Restaurant, where many of the day-to-day operations and responsibilities are carried out by himself. His reliability, consistency, and attention to detail make him an important part of the team, helping to ensure smooth service and high standards across every aspect of the kitchen.
Known for his calm approach, strong work ethic, and willingness to continuously learn and improve, Mark is a valued member of the brigade and an exciting chef to watch as he continues to progress in his career.
