Continuing our announcement from yesterday, we’re thrilled to share the amazing wines we’ll be serving at our upcoming dinner and their perfect pairings!

🍾 Jacque Bruere Brut Reserve - This sparkling Chardonnay and Pinot Noir blend is best enjoyed with the rich and savory brioche with camembert and mushrooms in truffle sauce.

All my life I have been interested in food and what surrounds it. Starting from sorrel “sandwiches” with tops and berries, which I “cooked” as a child at the dacha from everything that grew under my feet. Ending with the history of gastronomy and food as a cultural code that has influenced the development and history of humanity.

Now that I’m back from studying ecology and sustainability at Mad academy 🔥 Copenhagen I’m especially convinced that cooking is also a way of taking responsibility and a form of activism. Without boring moralizing lectures “we all gonna die”, but with a spark, perceiving this as a challenge and a basis for innovation and creativity. 💡

My food is pure and simple flavors with unusual accents, greens and roots, but without ephemerality, relying on traditional cooking techniques without historical fanaticism. Since food is an experience, I bring many of my dishes from travel, but adapt them to the location where I cook using local products 🥗 . Fire and fermentation, light and hearty, simple and complex, France and Asia: everything is used to express yourself and just to have fun.

Cooking food in Georgia has been one of the greatest adventures of my life. Mainly because cooking food in Georgia is impossible. Here, it’s the food that “cooks” you every day to meet its standards.

To come close to meeting these standards, I think I’ve developed my own approach to handling food in Georgia. I reasoned that to truly appreciate its promises, one person and even one lifetime aren’t enough—you need good company. This thought excited me so much that ever since, I’ve been seeking the perfect companions for each Georgian ingredient, making the wait for what the food promises a delightful experience. 🍲

I invite honey to join jonjoli, chocolate to accompany lobio, wine and saffron to pair with herring, caramel to complement lori, lemon to enhance nadugi, almonds and Parmesan to go with tarragon, and herring roe to match matsoni. For all of them, I bake a French baguette, assemble this delightful company on sandwiches, and pour myself a glass of wine. 💕

With these «buters», I travel to bars and cafes to meet new people who value the promise and anticipation of happiness far more than the mere necessity to eat and drink. This is my adventure—the best kind, one that can be experienced and savored.

Today, we’re shining the spotlight on Irakli Mgaloblishvili the importer of New World wines in Georgia. 🌟

Love for New World wines began with love for a woman and then spread to wine. 💕🍷 Because some loves are meant to be shared, enjoyed, and savored. Cheers to love in all its forms!

The geographical features of New World wine-producing countries, their proximity to the ocean, result in distinctive winemaking compared to Georgian wines. Importing New World wines to Georgia offers an incredible experience.

The proximity to the ocean in Cape Point lends the wines a minerality, freshness, and the spirit of the breeze. South Africa was populated by immigrants from various European countries. Today, French influence plays a significant role in winemaking.

Chile was also settled by immigrants from Portugal and Spain. Vineyards were abandoned for a long time, but now winemakers are restoring them by working with old vines. The Copa winery works with old vines, some of which are between 100 and 150 years old.

Stay tuned! Soon, everyone will have the opportunity to taste these wines paired with exquisite dishes by a top chef. 🍷🍽️

Georgia, a land where the art of winemaking has deep roots. Nature, in its wisdom, split Georgian wine and cuisine into two beautiful halves.

In Kakheti, the heartland of Qvevri wines, we find wines fermented and matured in traditional clay vessels buried underground. These full-bodied Qvevri wines, with 100% skin contact, perfectly complement Kakheti’s rich and hearty dishes. Picture succulent meats and robust stews, harmonizing seamlessly with the bold flavors of the wine.

As we journey westward, we enter the realm of Churi wines. These wines, with a lighter touch of skin contact ranging from 5% to 30%, exude freshness and acidity. Here, herbal and fruity notes dance gracefully with creamy cheeses, herbal appetizers, and delicate white meats.
