Prawn lollipops, crisp-fried with a sweet chilli glaze. Chargrilled octopus skewer. Seared scallop with minted garden peas. Rack of lamb with truffle mash. Duck breast with pineapple fried rice.

And to finish — sweet potato and squash with a cinnamon sugar pretzel, poured alongside a Pedro Ximénez from a Jerez bodega founded in 1744.
