When Matthew was 20 his father, Colin, asked him āif you ever have your own restaurant, what would you call it?ā āNo Pretenceā was his answer. The thinking behind that (he knew it was a stupid name for a restaurant) still rings true of The Moorings today. We are not into fussy, played around with food. Food should be delicious, generous, beautiful, warming, a celebration of its ingredients. At lunch today I admired the most beautiful fish special I have seen on the pass in a while. It was a piece of art, but simple all the same. Thereās nothing on that plate apart from fantastic ingredients, cooked well and presented beautifully. And that in itself is testament to how far we have come as a team. We are working with people whoāve grown to appreciate the value of āno pretenceā, and we are surrounded by guests and diners who feel the same. So 35 years later (ok, 34(!)), I think Matthew has stayed true to his initial values as a restaurateur. Together with a wonderful kitchen team, he has built a dining experience thatās different to any other in Jersey. He has done that by weaving in my Norwegian heritage (his choice, not mine!), his own knowledge of food culture, his understanding of the Jersey market and many inspirations from our travels. We never go away without bringing something back! This summer, it was an octopus dish eaten in Provenceā¦now on our new autumn menu. Food is a journey tooā¦. And itās the chapters in that journey that keep you moving forward- ever authentic, true to yourself- without pretenceā¤ļø
