Stretching your Dough
We wouldnt use a rolling pin when shaping our pizza unless you want a thin crispy base.
Always stretch your dough evenly. Dont stretch from the middle as this will cause you to have a really thin base. Stretch from the outside. Leave a nice lip around the edge which hopefully puffs up nicely in the oven to form your pizza crust.

Resting your Dough

If the gluten in your pizza dough hasn't developed enough, it can cause your dough to tear very easily.
Properly developed gluten is what gives your dough its pizza crust texture. If this hasnt been processed enough when you start to stretch your dough, it will bounce back to its original ball shape.
You will need it to prove longer.
Giving your dough time to prove will prevent tearing and make it easier to spread to your shape. If you have time, letting your gluten proof overnight in the fridge is the ideal when trying to avoid common pizza dough problems.

Kneading your pizza dough properly is important as it will help to build the gluten.
If your pizza dough has not been kneaded for long enough, it may not have had the chance to build up a strong gluten network.

A bit of dough-ology for you - When mixing your pizza dough, the flour and water create a chemical reaction that results in a build-up of gluten. Gluten is what helps create a stretchy texture, allowing the dough to stretch without breaking.
