With mixed emotions, we’re announcing that Ichiban Fusion will be closing indefinitely from 1st September. We will be moving out from this current address.

It’s been an absolute honour serving you, sharing our fusion kitchen, and building such a wonderful community. Every guest, every meal, every moment meant the world to us.

This is a pause, not forever—we hold hope for the future, and leave with nothing but gratitude. Thank you for every bit of love and support you’ve given us.

How do you build balance on one plate?

A good Japanese meal doesn’t just fill you up. It moves well from the first bite to the last. Soft, crisp, warm, fresh. If the pacing is right, the whole course feels calm and complete.

Start with something light and warm, like miso soup with soft tofu, seaweed, and vegan dashi. Then bring in contrast. Agadashi tofu gives you that crispy-fried bite in dashi broth, with grated mooli, spring onion, and ginger adding brightness.

From there, let texture do the work. Gyoza crisped on the bottom bring comfort and a little richness. Wonton-skin dumplings with pork and vegetables, or chicken and prawns, give you a different kind of bite altogether. Same idea, different feel.

If you want a bolder middle course, chicken karaage with zesty spicy mayo brings heat and crunch. Chicken yakitori shifts things again with that sweet-savoury glaze. One leans punchy. One leans gently caramelised. Both keep the meal moving.
