We’re still sorting out a few legal matters with our solicitor, but hopefully not much longer now.

We miss you all! After years of working every day, staying at home feels a bit strange. These days it’s just looking after the dog, growing vegetables, and trying not to get too bored 😂🐶🌱

It’s relaxing… but not nearly as exciting as seeing all of you!

Hopefully we’ll have some good news soon. ❤️

Good news everyone! The lawyer situation is finally moving forward again 🙏 We’re just waiting for the final stage now, and hopefully we’ll be able to start work within the next 3–4 weeks. Looks like some good news is finally coming! 🤞

No work lately, so I just keep cooking for my husband 🤣
Now we’re both getting fatter every day 😂

Today I made stir-fried mint with minced pork again 😂 (Thai holy basil is soooo hard to find here 😭)
But honestly… it’s still really tasty! Give it a try 😂😂😂

Thai Style Pandan Crepes with Young Coconut 👇

This menu is a little bit on the premium side, but I can guarantee it’s absolutely delicious 😊
Fresh pandan leaves can be found at most Chinese supermarkets. The Aroy-D coconut milk and Chaokoh young coconut meat are easy to find there too. Good luck and enjoy ☺️

* 1 egg
* 120 g sugar
* 1/2 tsp salt
* 250 ml coconut milk
* Juice from 5 pandan leaves, blended and strained (50–60 ml)
* 150 g tapioca starch
* 50 g rice flour
* Mix everything well, then:
* Strain the batter once
* Let the batter rest for 30 minutes

Then add:

* 130 g young coconut flesh
* Black sesame seeds


• Cook on low heat 😊about 4-5 minutes
