MEET OUR PARTNER BRAND: SPRING
Essex, United Kingdom

Spring exists to solve a simple problem, most bone broth tastes like punishment. Applying chef-level craft to 100% British bones, Spring creates bone broth so rich and concentrated that taste becomes proof of quality, no compromise between health and flavour.

At the launch we tried Spring's Rare Chicken Bone Broth, a concentrated 5.4g protein per 100g, made from chicken sourced from Foss Meadows, Sutton Hoo and organic Wootton Organic. Serve it hot, like a proper restorative drink. Strength you can actually taste.

New season Royal Gala apples bring crisp, juicy flesh and a naturally sweet, mild flavour that makes them a brilliant eating apple straight from the crate. Their firm texture holds up well sliced into salads or served alongside cheese, and they need very little beyond a good bite to show off their quality. A proper taste of the new British apple season.

MEET OUR PARTNER BRAND: THE FINE CHEESE CO.
Bath, England

Founded in 1990, The Fine Cheese Co. are dedicated selectors and affineurs of the best British and European cheese, built around one founding motto: "Seek out the best, and, when you've found it, keep looking." They're also the only cheese company in the world with their own bakery, Artisan Biscuits, making crackers and biscuits designed purely to complement cheese.

Marc talked us through two standouts from the launch, Alp Blossom, a mountain-style cheese from Aargau, Bavaria, made by cheesemaker Albert Kraus, supple, savoury and sweet, finished with mountain herbs and flowers, alongside their own sea salt and olive oil cracker. Proper craft, proper pairing.

Sliced open, blue meat radish reveals a striking violet blue centre hidden beneath plain white skin, an unexpected surprise chefs love using for visual impact. Its flavour carries a peppery bite, milder than a standard radish, with a satisfying crunch that holds up well raw. Thinly sliced it brings real colour to a salad or crudite plate, while a quick pickle intensifies both flavour and colour further. A proper conversation starter root vegetable.

With slender stems, small florets and slightly bitter leaves, cime di rapa brings a distinctive, peppery edge that mellows beautifully with quick cooking. A classic in Italian cooking, it's brilliant blanched and finished in a hot pan with garlic and chilli, or stirred through pasta for real depth of flavour. A proper Italian green that rewards confident seasoning.

Harry caught up with Rob to talk about what chefs should be buying right now. The answer, hold onto summer for a little longer. Thanks to the sunshine and high temperatures we've had, this year's berries - blueberries, raspberries, blackberries and strawberries, have real sugar content and are eating brilliantly. Same story on the tomatoes, still going strong and set to run through into October.

Autumn's on its way, but while summer's still delivering like this, we say keep buying what's in season.

Tonight we're at Grosvenor House for the FPC Fresh Awards 2026 - and we have two reasons to be there.

Rushton's is a finalist for Foodservice Supplier of the Year and Sustainability Excellence - Supply Chain. Two categories, one night, one brilliant team behind both of them.

Fingers crossed. We'll report back!

Decana pears bring smooth, buttery flesh and a delicate, honeyed sweetness that makes them a brilliant dessert pear straight off the tree. Their texture holds up well poached in w**e or spices, while ripe fruit is best enjoyed simply sliced alongside good cheese. A classic Italian pear with real depth of flavour.

The Miyagawa variety brings small, easy to peel fruit with a deep orange skin and a wonderfully sweet, almost seedless flesh, considered one of the finest early season mandarins. Its delicate, fragrant juice makes it brilliant for desserts, dressings or simply segmented over a cheese board. A proper early taste of citrus season, prized for its consistency and sweetness.

Plump and conical with a ridged, papery beige skin, chervil root reveals a sweet, nutty flavour somewhere between parsnip and chestnut once cooked, with a delicate aniseed note reminiscent of its namesake herb. Roasting brings out its natural sweetness beautifully, while pureed it makes a fragrant, silky alternative to mash. A genuinely underused root vegetable that rewards chefs willing to give it a try.
