I add kimchi to my salad lunches to up my probiotics, you can make your own with these simple ingredients. Your gut and bank account will thank you for it.
Paste
One medium Napa cabbage
50 g Iodine free salt
Filtered water (enough to fill the jar)
1 tablespoon of grated garlic
1 teaspoon of grated ginger
2 tablespoons of fish sauce
2 tablespoons of Korean red pepper flakes
1 daikon
4 spring onions
Paste
140 g of rice flour
250 ml water
1 teaspoon of sugar
Method
Cut the cabbage into medium/ small pieces. Mix salt with the cabbage, add water and let soak for two hours. Rinse the cabbage and set aside.
Mix water, sugar and rice flour, simmer on a medium to low heat for a few minutes until you have a paste, let it cool. Add red pepper flakes, ginger, garlic, fish sauce and mixed with the cabbage add the daikon.
Pack the mixture into an airtight jar on a plate and let it sit in room temperature for two days. Release the gas a few times a day and leave in the fridge.
It can be eaten straight away or fermented after at least two days.
