I think they liked it! After judging, all 21 competition Paellas (that’s 210 portions or about 2100 spoonfuls!) are offered to the public for tasting. You have to be quick as they don’t last long!

The traditional ‘Paella Valenciana’ is only ever made with chicken, rabbit, local white beans (garrofó), flat green beans, a little tomato, garlic, saffron, pimentón, rosemary, snails, olive oil and fundamentally water, rather than a pre-made stock. The ‘stock’ or ‘broth’ is made by first frying the ingredients and then gently simmering them in water for 45-60 mins, before the rice is added for the final 15-20 mins of the process (depending on the rice variety), making this proudly protected method unique amongst other types of rice dishes in Spain, such as Arroz de Marisco (Seafood rice) which is made with a previously prepared stock. Authentic ‘Valencian Paella’ is never a mix of fish and meat or any other random ingredient (peas, chorizo, etc). That said, all of the above is only true for the traditional ‘Valencian Paella’ and there are hundreds, if not thousands, of wonderful rice, ‘Arroz’, dishes (some cooked in the ‘Paella’ pan, others in earthenware), produced throughout the region of Valencia and Spain, using almost every ingredient imaginable, often dictated by seasons, local produce, culture and traditions.
