Good Morning world! 🌎

I'm off to a busy start in the Botanical Bakes & Bites kitchen. I've made the fillings for my Caribbean Pasties and the Harissa/Crusader Rolls. I'll have a wee break whilst waiting for them to cool down before construction begins.

The Caribbean Pasties are made with a golden flaky pastry, and if you've ever wondered how I get that lovely colour, I add 1/4 a teaspoon of turmeric and a 1/4 of a curry mix that I buy through Buywholefoodsonline . Along with using https://www.instagram.com/flora?stkn=MTB0c3VnMW5jd2V4OA== plant butter, it makes a gorgeous golden pastry.

There are many Harissa mixes and pastes out there and as I haven't yet got around to making my own, I went through many trials before I settled for the Tesco *finest Rose Harrisa Paste. Some harissa pastes have a red pepper base and I didn't want to add another flavour to the filling. This one is tomato based and the flavour settles into the background nicely. I also find that the rose harissa, whilst no less spicy, has a softer edge to it. The chilli arrives more sedately rather than kicking you in the nose and eyes in one hit.

What do you do with 7kg of organic pears?! 🍐🍐

Well first of all, they'll mostly be peeled. The peel will then go in the oven and dried out ready for my pear and cardamom sugar. Great for sprinkling inside fluffy 'not-cinnamon' Rolls or over freshly made doughnuts 🤤

The pear flesh will then be chopped up ready for Pear & Ginger 🫚 chutney and the freezer. The frozen pear will then be used at a later date for my tasty Fruit Pockets 😋

I'll be up on Castle Square for the usual Lincoln Farmer's Market on the 17th with favourites such as Sossy Rolls and Caribbean Pasties and many more.

Apparently, cutting 4 inches off my hair in a panic about an Environmental Health inspection was completely unnecessary, but that’s just the way I am! 😂

Thankfully, inspection done, no issues whatsoever, and Botanical Bakes & Bites has kept its 5 🌟 food hygiene rating! 🤩⭐️🌠💫

I may be feeling just a little bit pleased with myself. 😁

No rest for the wicked though! It’s straight back into the kitchen because I have a private historical function this Friday, and Slyt Soppes and Tarte of Ymbre Day aren’t going to make themselves.

Many of you have seen us at events over the years, Ive set up a page for things folk have made using our products, Im also popping recipes as well.
If anyone has used our products in a recipe, would you let me know and if its a recipe I want to post on the page I will send out the same products out to you, for free, if you are willing to take photos and write the recipe down :)

I prefer not to use AI in my social media but once in a while, it comes up with something worth sharing.

I hate waste and this is an import part of the Botanical Bakes & Bites ethos. Although much of my food scraps go into my compost, I began to think about what else I could do with some of it.

I'm going to be making a Clementine and Almond Cake tomorrow for my best friend, Sharon Lockett, to take into work for a Macmillan coffee morning. I won't be using all of the peel in it though so I'm going to dry it out and use it to make an orange spice mix.

I use quite a lot of apples and pears in my baking, particularly in the Tartes of Applis so I've been experimenting with drying out the peels and making mixes that can be sprinkled on pancakes, homemade doughnuts, or even added to biscuits.

So here are a couple of pictures that chatgpt made for me. It did go a little Salvador Dali with a sliver of almond but I rather like the imperfection 😅
