Special of the weekend - Pasta “strozzapreti” with italian salsiccia al finocchietto, mushrooms, cherry tomato e black pepper.

The Story of Strozzapreti

STROZZAPRETI 👀 It literally translates to “priest stranglers.”

The most popular legend comes from Emilia-Romagna and Tuscany, where priests would visit local homes for their tithes, and the women of the house, less than thrilled to be feeding greedy clergymen for free, would twist the pasta dough by hand with a little too much… enthusiasm. Imagining, some say, exactly whose neck they were wringing.

Another version says the priests themselves ate it so fast and so much, free food, after all, that they’d nearly choke.

Either way: 400 years later, the legend lives on. The pasta stayed. The priests, presumably, learned to slow down.
