CAPIROTADA BLANCA ESTILO SONORA

6 panes blancos tipo bolillo o birote (o 1.5 baguettes)
1 taza de crema
1 lata de leche evaporada
2 latas de leche condensada
1/2 cucharadita de canela en polvo
2 plátanos machos
3/4 de taza de aceite vegetal
1/2 barra (aprox. 60 gramos) de mantequilla
1/3 de taza de almendras, nueces o cacahuates (en mitades, rebanados o picados)
1/3 taza de fruta seca picada finamente
1/2 taza de coco rallado
1/2 taza de ciruelas o dátiles picados
1/3 de taza de uva pasa
1 naranja entera

1. Corta el pan en rebanadas de entre 2 y 3 centímetros de grosor. Tuéstalas sobre un comal o dentro del horno hasta que estén secas y crujientes. Déjalas enfriar un poco.
2. Toma dos o tres rebanadas de pan tostado con las manos y rómpelas sobre un recipiente grande. No es necesario que se desmoren completamente, pero cada rebanada debe quedear en varios pedazos, desde migajas hasta trozos medianos. Sigue así hasta que todo el pan quede deshecho en el recipiente.

3.Coloca la crema, la leche evaporada, el contendo de una de las latas de leche condensada y la canela en una licuadora y licúa brevemente para que los ingredientes queden combinados. Vierte esta mezcla al recipiente con los trozos de pan y revuelve, utlizando una pala de madera o cuchara grande, hasta ver que todo el pan quede húmedo. Mientras haces el siguiente paso (el de freír los plátanos), el pan irá absorbiendo el líquido; revuélvelo de vez en cuando para ayudar a este proceso.

4. Pela los plátanos machos y córtalos en rebanadas de no más de un centímetro de grosor. En una sartén grande calienta el aceite; fríe las rebanadas de plátano, volteándolas una vez, hasta que estén cocidas y doraditas. (El tiempo variará según la madurez de los plátanos: los bien maduros tardarán quizás unos 5 minutos por lado; los más verdes necesitarán tal vez 8 minutos por lado a fuego mediano-alto.) Saca las rebanada del aceite y déjalas escurrir sobre papel absorbente.

5. Prende el horno a 350°F/180C° para que se vaya calentando.

6. Derrite la mantequilla. Vierte una cucharada de mantequillo en el fondo de un refractario o molde para pastel de 20 centímetros cuadrados (u otro de medidas parecidas); con una brocha o un pedacito de papel extiéndela para que queden engrasados el fondo y los lados del molde. Reserva el resto de la mantequilla para usarla después.

7. Abre la otra lata de leche condensada. Vierte la cuarta parte sobre el fondo enmantequillado del refractario y extiéndelo. (Guarda el resto de la leche para después.) Esparce las almendras, nueces o cacahuates y la fruta picada finamente sobre la leche condensada.

8. Con las manos toma la mitad del pan remojado y extiéndelo sobre el fondo del molde, presionando ligeramente para que quede compacto. Encima del pan esparce el coco y las ciruelas (o los dátiles) picados. Sobre esta capa extiende la otra mitad del pan remojado, asegurándote de que quede parejo. Esparce las uvas pasa encima de todo y presiona ligeramente para que las pasas estén bien pegadas a la mezcla de pan.
