As part of our ongoing commitment to supporting charities and organisations close to our heart, Lympstone Manor is proud to once again raise funds for the National Trust.⁠
⁠
As Europe’s largest conservation charity, the National Trust cares for coastlines, countryside, woodlands, historic buildings and gardens, protecting these special places for generations to come.⁠
⁠
Here at Lympstone Manor, our Sculpture Walk connects with the Exe Estuary Trail, bordering National Trust parkland. Our teams work together to help preserve and enhance this landscape, including encouraging biodiversity and supporting the rejuvenation of our ponds.⁠

Each month Lympstone Manor Hotel supports a selected charity and this month we are raising money for The National Trust.⁠ ⁠ ⁠

🌿 Let’s boil it down… to basil

One of my favourite herbs, and one that rarely lasts long in our kitchen at home.

Basil has such a wonderful fragrance and freshness to it. It works beautifully across so many different cuisines, but sometimes the simplest way to enjoy it is the best.

A firm family favourite in the Caines household is my basil pesto pasta sauce, fresh basil blended with olive oil, pine nuts, Parmesan and garlic. Simple, full of flavour and perfect stirred through pasta for an easy supper.

So, let’s boil it down… what’s the one herb you couldn’t cook without? 🌿

🌿 150g fresh basil
🫒 300ml olive oil
🥜 100g pine nuts
🧀 50g Parmesan cheese
🧄 3 cloves of garlic, peeled

Simply put all of the ingredients into a blender or food processor and blend to a fine texture.

Transfer to a container and refrigerate until needed, or make a batch and freeze some to keep that wonderful freshness for another day.

Then simply stir through your favourite pasta and serve.

Sometimes, the simplest things really are the best.

🍷 Beaujolais Nouveau has arrived… and we’re raising a glass.

Every year, on the third Thursday of November, glasses are raised around the world to celebrate the release of Beaujolais Nouveau, and this year, we’re joining the celebration at Lympstone Manor.

Join Michael and the team for a special Beaujolais Nouveau W**e Dinner in the Pool House Restaurant & Bar, celebrating not only the famous new vintage, but some outstanding w**es from across the Beaujolais region.

Our host for the evening will be Chris Piper of Christopher Piper W**es, who will guide us through a carefully chosen selection of w**es, each paired with a seasonal menu designed by Michael Caines and prepared by the Lympstone Manor kitchen team.

Julie has been recognised for her hard work and dedication in overseeing Lympstone Manor’s Relais & Châteaux MyImpact sustainability submission. Working collaboratively across the business, Julie coordinated and collated sustainability data, ensuring the submission was completed accurately and delivered by the deadline.⁠

This important piece of work enables Lympstone Manor to benchmark our sustainability performance against other Relais & Châteaux properties around the world, helping us understand our progress and identify opportunities to continue improving.⁠

Summer evenings at Lympstone Manor ✨

Join us at on Sunday 30th August for an evening celebrating the last of those long summer nights, in partnership with Belvedere Organic Vodka.

Arrive from 6pm and begin with a Belvedere Vodka and Luscombe mixer, before settling in beneath the canopy as our resident DJ provides the soundtrack to the evening.

As the sun begins to set over the Exe Estuary, enjoy a relaxed selection of chef-prepared barbecue bites and seasonal bowls from 8–9pm.

Sunday 30th August | 6pm–late

For the month of August, Lympstone Manor's Charity of the Month is the RNLI.⁠
⁠
The RNLI charity saves lives at sea. Its volunteers provide a 24-hour search and rescue service around the United Kingdom and Republic of Ireland coasts. ⁠
⁠
The RNLI operates 238 lifeboat stations in the UK and Ireland and more than 240 lifeguard units on beaches around the UK and Channel Islands. The RNLI is independent of Coastguard and government and depends on voluntary donations and legacies to maintain its rescue service. ⁠
⁠
Since the RNLI was founded in 1824, its lifeboat crews and lifeguards have saved over 146,000 lives. ⁠
⁠
Not only does our locality make this charity important, but as a Chef Michael Caines is especially aware of how the charity safeguards our fishing industry around our coastline, particularly out of Brixham and here in Exmouth with trawlers working sure in the knowledge that the RNLI are there if they get into difficulty on the water. ⁠
⁠
Established over 200 years ago, Exmouth Lifeboat Station opened a new station and boathouse in 2010, which houses a Shannon class lifeboat and an inshore D class lifeboat. The crews have been awarded 7 medals for gallantry.⁠
⁠
Each month Lympstone Manor and the Michael Caines Collection supports a nominated charity through promotion and awareness campaigns plus a discretionary 50p donation on the restaurant bills. ⁠

Working alongside an outstanding collection of South West businesses, Michael created a bespoke menu inspired by heritage, exclusivity and locality, showcasing the very best seasonal ingredients and the exceptional standards that define the Michael Caines Collection.

Congratulations to everyone at on this exciting milestone. We look forward to continuing our partnership and creating many more memorable experiences together.
