Back in the training room with Dasha.

Some of the sponsored equipment she’ll be using on stage at the World Barista Championship has arrived, including the Rev Zero and Unibasket, so it’s time to start getting familiar with it.

We’ve given her Peachy to dial in while she gets used to the new setup. Partly because it’s one of our favourite coffees to drink around the roastery, but also because it comes from Nestor Lasso, who produced the coffee Dasha used to win the UK Barista Championship earlier this year.

With WBC only a few weeks away, we’re spending some time with Dasha in the training room as she works through the equipment, the coffee, her presentation and the process of getting ready to represent the UK on the world stage.

Four new coffees have joined the lineup.

Root beer is a vibrant Colombian from Edinson Argote at Quebraditas Farm in Huila. A carefully controlled washed fermentation brings crisp acidity, clean fruit character and a silky texture, with notes of white raspberry, lemongrass and cane sugar. Bright, precise and balanced.

Blueberry Cream comes from the Halo Beriti washing station in Ethiopia’s Yirgacheffe region. An anaerobic natural process brings ripe blueberry, tropical pineapple and delicate lavender together with rich, creamy sweetness. A fruit-forward coffee with plenty of depth and a long, sweet finish.

Ginger Beer is September’s Exceptional Subscription coffee. Produced by Linarco Rodriguez at Betania Farm in Huila, this washed Colombian has lively citrus acidity, layered sweetness and a crisp, refreshing profile. Available exclusively through Exceptional Subscription until October.

Berry Jam has moved onto another harvest, keeping the classic profile that has made it one of our most popular coffees. Produced by smallholder farmers in West Guji, this natural Ethiopian brings goji berry, blackberry jam and blueberry, with concentrated sweetness, vibrant acidity and a juicy finish.

Meet Dasha , the 2026 UK Barista Champion.

Dasha was a first-time competitor at UKBC, and she did it with a coffee that’s been on the Formative Café menu since the team first sourced it.

It’s a coffee we’ve always loved serving, and one that customers can actually afford to order in a café. Which, for a coffee that just won the UK Barista Championship, is pretty unusual.

Over the next few weeks, as Dasha gets ready for the World Barista Championship in Panama, we’ll be sitting down with her to talk about her process, her experience competing, and the things she finds interesting about coffee.

A few updates to the lineup.

Ribena is now available on our website, after being featured as last month's Exceptional Subscription coffee we are happy to announce we have enough left over to offer it online. Produced by the Iyenga Cooperative in Tanzania, this is a clean, structured washed coffee with bright acidity, soft fruit character and a balanced sweetness. A more classic expression of Tanzanian coffee, with the clarity and structure that makes it equally enjoyable as filter or espresso.

Berry Jam has moved over to a new harvest, keeping the same profile that made it a staple of our lineup. Sourced from Chelichele in Ethiopia's Gedeb region, this is a vibrant natural coffee with floral aromatics, juicy berry sweetness and a clean long finish.

Pink Starburst has officially earned its place in the Competition Series. Our very own Daria-Dasha-D used this coffee to win the 2026 UK Barista Championship and will now represent the UK at the World Barista Championship later this year in Panama. Produced from Ombligón at Finca El Diviso in Colombia, it is an intensely fruit-driven coffee with layered sweetness, bright acidity and a dense, silky texture.

Some moments are worth celebrating.

A huge congratulations to our colleague Daria Billa - the newest UK Barista Champion.

To win the UK Barista Championship on her very first attempt is an incredible achievement, and is testament to Dasha’s hard work & dedication.

In October, Dasha will represent the UK at the World Barista Championship in Panama, competing alongside the very best coffee professionals in the world.

This also marks something we’re incredibly proud of as a team: for the fourth consecutive year, Formative Coffee will be represented at the highest level of coffee competition.

Competition has always been about more than trophies for us. It’s about curiosity, experimentation, relentless practice, and pushing ourselves to better understand coffee and hospitality. Seeing our team continue that tradition is something special.

Congratulations, Dasha. Panama awaits. 🇵🇦☕️

A quick update from the roastery.

It’s been a busy few weeks, but we’re now roasting in the new space.

The Loring is installed, the racking is in, and the roastery is starting to feel like a fully functioning space.

In this update, brews one of his favourite coffees at the moment, Peachy, before giving us a look around the new roastery and how everything is coming together.

It’s great to see the pieces start to fall into place.

A quick update from the roastery.

Week two has been all about getting the space ready for the roaster. The walls are now finished, the floor is halfway through being painted, and the Loring has arrived safely.

Seeing the roaster in the building makes it all feel a bit more real.

If all goes to plan, next week we'll have the Loring installed and another major piece of the puzzle in place.
