Vegan Dandelion Honey 🐝
Infuse your Wild foraged Dandelion petals with a few lemon slices in boiling water and simmer for 20 minutes.
Leave to infuse over night
😴💤
Strain the liquid and simmer on low with soft brown sugar until honey like consistency.
Easy! 🍯

I used a 1:1 ratio with a Pyrex 1/2 Litre Jug

🌼Jug petals
💧Jug water
🍋3 lemon slices
🌱500g sugar

Forage responsibly! Leave plenty for our wee adorable bees 🐝

🌱Cleavers also know as sticky w***y amongst other namesakes reaches up to 3ft tall clinging to all it touches.

🌱The best time to gather this known w**d is early spring before it’s flowers blossom

🌱Juice its leaves and stem for a fresh spring tonic.

🌱Cleavers is a lymphatic cleanser, promoting flow of the system by purifying it of toxins.

🌱Add the fresh green juice to smoothies and salad dressings.

🌱Poultices can be made by pulverising the leaves and applying the bruised plant to nettle stings, sores, burns and blisters as it cools and soothes inflammation reducing heat and irritation.

🌱These attributes make cleavers a valuable tonic for ulcers and throat and mouth sores.

🌱It also soothes the urinary tract making it a great tonic for cystitis, prostate and kidney inflammation.

🌱Due to its capacity to cleave to anything, including itself Galium aparium was used by Greek and Scandinavian shepherds to craft a sieve using barbed stems to strain milk. This practise is still applied in Sweden today.

🌱While the roots are inedible, they are a favourable natural dye. Used in combination with poke berries to develop an organic red hue and permanent dye for wool.
