One of the best parts of today at Tonbridge Farmers Market was showing people how to spot a genuinely fresh fish.
Forget all the myths. Here's what your fishmonger looks for: • Eyes that are bright, clear and glassy, like marbles • Deep red gills • A firm body that springs back when you press it
And now for the one that catches everyone out...
If your fish feels slimy, don't panic. Fresh fish naturally has a protective slime. It's when it becomes sticky that alarm bells should start ringing.
Who knew slime could actually be a good thing?
Hopefully a few more people went home today feeling confident about choosing great quality fish. After all, buying fish shouldn't be a mystery.
