"Turmeric soupy noodles with Prawn and vegetarian dumpling"
love for noodles can never go less for me.
this time tried to create turmeric noodles cooked in vegetable stock and very few spices. The vibrant colour of turmeric just not soothes your eye even it is good for your health in this cold winter.
Method
1) I have used thin egg noodle, Boil the noodles for 3 min in boiling water with 1tbs salt and pinch of turmeric. once the noodles is cooked drain the water and some oil so the noodles dont stick to each other.
2) In a pan add 3 cups of water pinch of turmeric, 1inch finly chopped ginger (or 1/2 tsp ginger powder) 1tsp cumin powder, pepper powder as per your taste, add finly copped vegetables (I have used 1 capsicum, 3carrots, 1onion), 1 star anis, 1 medium stick cinnamon, 3 clove, add salt to taste and boil it for 20 min on covered lid untill you get vetable stock
4) Separate the vegetable stock and vegetables and remove whole spices from it.
5) Making dumplings: In a bowl add chopped and boiled vegetable (make sure no water in it) minced prawns (this is optional), 1tsp ginger garlic paste, 2-3 tbs spoon corn flour,. 1 tsp garam masala, 1 tsp cumin powder, salt and pepper as per your taste. bind them all together and make small balls of it and shallow fry in a pan for 5 min.
6) Add prepared vegatable stockin a pan, add cooked dumplings to it and boil it for 8 to 10 min and tgen add cooked noodles to it and boil it for another 3 min. the soupy noodle is ready to serve.
Serve it hot and enjoy it in the cold winter.
