Shop-bought gherkins are sweet. That's the problem.

You've already got British beef, rendered fat and molten American cheese on that bun. Adding sugar on top of all that just flattens it out. What it needs is acid — sharp, herby, properly cold.

So we brine our own. Sliced to a consistent thickness so every bite lands the same, and cuts clean through the crust instead of sitting on top of it.

One pickle. Completely different burger.

For the record, Mason, here's what you ate: two British beef patties smashed thin on the flat-top, double American cheese, triple smoked streaky bacon, our own caramelised onions, and the house baconaise — that's bacon fat blended through the mayo, and it's the bit that makes the whole thing work.

Glad it did the job.
