Fish and chips is on just about every pub menu in Britain, but we like to do ours a little differently.
We usually use whiting rather than automatically reaching for cod. It’s delicate, slightly sweet and beautifully flaky, with a crisp golden batter around it.
The chips are chunky and cooked in beef tallow for extra savoury depth, with crushed minted peas, homemade tartare sauce and a wedge of charred lemon to squeeze over.
A proper pub classic, done the Rose & Crown way.
