Last night, I had the immense honour of being named Lauréate de la catégorie Chef.fe aux Hôtel & Lodge Awards 2026.

To receive this recognition amongst so many talented chefs and remarkable establishments is something I accept with deep gratitude and humility.

This moment is not mine alone. It belongs to every person who walks this journey beside me. To my incredible team at Restaurant Mosaic, thank you for your passion, dedication and unwavering pursuit of excellence each day. To my family, whose love and support continue to inspire me beyond words. And to our guests from around the world, thank you for your trust and for allowing us to share our story through every experience we create.

When we opened the doors of Château des Tesnières, it was with the dream of creating something deeply personal. A place where nature, emotion, beauty and gastronomy could exist together in harmony. Moments like these remind me why we continue to pour our hearts into what we do each day.

There is something incredibly special about the bond between a mother and daughter.
A love that quietly shapes who we become, supports us through every season of life, and remains one of life’s greatest gifts.

This Mother’s Day, on Sunday 31 May, I warmly invite you to join us for a beautiful lunch at Restaurant Mosaic as we celebrate the remarkable mothers and women who fill our lives with love, strength and grace.

Just moments from Château des Tesnières, I was recently introduced to the work of Olivier Renaud in Châteaubourg. What struck me most was the quiet way he speaks about his animals, with respect, patience, and a deep understanding that true flavour cannot be rushed.

This morning, he arrived at the château with a semi wild duckling and a Coucou de Rennes. Holding this beautiful Breton breed in my hands, you immediately feel the difference. It carries the story of time, of careful rearing, and of truly exceptional French produce.

I had the privilege of sharing a beautiful tasting with Sébastien Chérel of Miyabi Wagyu, alongside Chef Emmanuel from Carnivore Restaurant.

There is something deeply moving in discovering a product shaped with such precision and respect, where Japanese philosophy meets the quiet strength of Breton land.

Walking the farm, seeing the care given to each animal, feeling the intention behind every detail… it changes the way you understand what arrives on the plate.

These are the moments that remind me why I love what I do.

With heartfelt thanks for this generous and inspiring moment.





J’ai eu le privilège de partager une très belle dégustation avec Sébastien Chérel de Miyabi Wagyu, aux côtés du Chef Emmanuel du Carnivore Restaurant.

Il y a quelque chose de profondément émouvant dans la découverte d’un produit façonné avec une telle précision et un tel respect, où la philosophie japonaise rencontre la force discrète du terroir breton.

Marcher dans la ferme, voir l’attention portée à chaque animal, ressentir l’intention dans chaque détail… cela transforme la manière de comprendre ce qui arrive dans l’assiette.

Ce sont ces moments qui me rappellent pourquoi j’aime profondément ce métier.

Avec toute ma gratitude pour ce moment généreux et inspirant.
