Aash Reshteh, a flavorful vegan/vegetarian dish from Iran.
Featured on Taste Atlas as #30 best soup on their world map and as their 2nd best Iranian soup.

Did you know that the word cook/chef literally translate to "a person who cooks Aash"? That's how important this dish is in the Iranians culture, and that's how difficult it is for a cook to make it, and get it right. As if you need to be making Aash to be considered a good cook!

But wait, what is Aash?
It is very difficult to describe it actually. It's NOT a soup (even though it is categorized by Taste Atlas as a soup), it's NOT gravy, and it's Not a stew! Aash is a unique Iranian delicacy that used to be made for Persian royalty around 500 years ago but gradually found its way into every Iranian household. It is made with chickpeas and red beans and it is combined with a medley of fresh vegetables and fragrant Persian seasonings to make a high protein plant-based goodness.

The secret lies in the handmade 'Reshteh' noodles, which bring a unique texture and flavor to the dish, elevating it to a level of simplicity and sophistication. But the magic doesn't stop there. Each bowl of 'Aash' is topped with caramelized onions, fried garlic, and fried mint, creating a symphony of flavors that dance on your palate.
